*Ingredients and Seasonings:*
1. Free range eggs: five
2. Green onions: a handful
3. Table salt: one spoon
4. White vinegar: a small amount
5. Water: 1:1 by weight with egg liquid
*Production steps:*
1. Make sure to choose fresh eggs with a shiny surface and a layer of white frost on the eggshell.
2. Crack all five eggs into a bowl.
3. Cut the shallots in half, then chop into finely chopped scallions.
4. Add chopped green onion to eggs.
5. Add a spoonful of salt and a small amount of white vinegar.
6. Use chopsticks to break up the egg liquid. Pick up the egg liquid and beat it up to ensure that the egg liquid is even.
7. Prepare water equal to the weight of the egg liquid (if you don’t have a kitchen electronic scale, you can use two bowls of the same size to determine the same amount of water).
8. Pour water into the pot and bring to a boil over high heat.
9. After boiling, turn down the heat and slowly pour in the egg liquid.
10. After pouring the egg liquid, keep the heat on medium-low and wait 2-3 minutes for the egg liquid to set.
11. When you see that the edges of the egg liquid are set and bubbles are bulging, start using a spatula to stir.
12. Continue to stir-fry. When the egg liquid begins to solidify a lot, stir frequently. If the egg liquid clumps into large pieces, use a spatula to cut it into small pieces and continue to stir-fry.
13. Continue to stir-fry until the water turns from cloudy to clear and the eggs turn into large chunks.
14. After frying like this, you can take it out of the pot.
