Apple Pear & Custard Tart

This lovely tart has a soft cake-like pastry base covered in apple and pear and then some custard with more pastry over the top which has a lovely soft crunch to it. It makes a perfect dessert served cold, with ice cream. It can be served warm too if desired.

Thanks for the inspiration, Geoff. I tried this recipe out the other day, and it turned out really well (despite not paying attention to the size of dish you used and so had to improvise on quantities of fruit and pastry). The apple/pear combination with the zesty lemon pastry worked perfectly. I used fresh pears and the crunchy texture contrasted nicely with the apple compote and custard. My French wife was well-impressed!! Must say that I really enjoy your videos and presentation style- eminently watchable. I’m sure it’s much harder than it looks. Keep the videos coming😋

While you were grating the pastry for the top I was thinking "he's flipped his lid" In the end it looked and sounded great. It never cross my mind to grate the pastry. Well done

Ooh Geoff, If you had posted this two days earlier my Rhubarb Apple and Custard Tarts wouldn't have ended up such a disaster, although all did get eaten with some cream to hide the crime ! Great video as always mate, thanks a lot.
