Today we're cooking up no bake chocolate chip cookie dough, a frying pan parmesan loaded galette plus a sushi bake. Part of the latest Barry tries, taken from viral recipes on TikTok. These brought some really interesting results, the galette was actually amazing and super simple, the cookie dough took me down an expensive oat flour path but the sushi bake really stood out for me! Ingredients list: to follow
No bake chocolate chip cookie dough
1 tin chickpeas, drained & washed
3tbsp Oat flour (can be made by whizzing up porridge oats too)
80g milk chocolate chips
60g almond butter / smooth peanut butter
1tsp vanilla extract
3tbsp maple syrup
Pinch salt
Potato Galette
2 medium potatoes, peeled & grated
2tbsp veg oil
100g parmesan, grated plus extra to taste
Pinch of salt and pepper
1 x spring onion, chopped
Handful dill, chopped
Sushi Bake
400g sushi rice, cooked to package instructions
60ml Japanese rice vinegar
2tbsp caster sugar
2 tablespoon Granulated Sugar
Pinch salt
1 tbsp sesame seeds
1tbsp sesame oil plus extra to drizzle
4tbsp Furikake seasoning
300g crab meat, drained
100g Kewpie mayo / or normal mayo is fine
50g Sriracha or more to taste if you want hotter
1 egg
1tbsp Black sesame seeds
To Serve:
Cucumber, flesh removed, cut into sticks
Spring onions, sliced
Some Nori (seaweed) sheets
Extra mayo and sriracha
More sesame seeds - toasted or black

If you make the 'sushi' bake again i would suggest trying Japanese kewpie mayo instead of regular mayo. Apparently it's a bit of a different taste. As far as the furikake, i use a very basic one on rice at home (there's different varieties). Mine is just nori, toasted sesame seeds, salt, and sugar. Still very yummy.

18th century mushroom ketchup. jastownsends youtube channel has a famous recipe on it you can find at savoringthepast. It is the precursor sauce that led to Worcestershire sauce, brown sauce, and tomato ketchup. But I would put a twist on it, and do the standard with cloves, than make several other mixes like adding ginger, nutmeg (especially nutmeg trust me), cinnamon or Chinese five spice and so on. I highly recommend dehydrating the leftover strained mushrooms and grinding them into a powder. It makes an AMAZING dry seasoning.

Always had one as a kid, so I got a $13 Kmart one when I moved out. It's nothing fancy but it's so worth having, you don't have to think about the rice at all and it's always good. If you're not doing rice (or whilst it's cooking) it also functions as a steamer, so it's definitely not a one use gadget.

I bought a super cheap one years ago. I’ve cooked rice, steamed, made oatmeal, and a cake in it. Like, this thing was a switch and 2 lights, and it still is a multitasker, and lasted years.

I bought an inexpensive rice cooker years ago. I didn't want to spend a lot because I wasn't sure if I would like it. I've had it for years and I love it. It makes the best rice, just set it and forget it.

You should definitely do the rice cooker video. I got one worth $10 USD 15 years ago and it still works like a champ. Perfect rice every time with basically zero effort.

Just dont let your roommate use a fork on the nonstick surface. I had my $10 one until that happened. My new one has a steam basket though, which i love.

What's the brand and model of the rice cooker? Curious considering it lasts for 15 years.

@@emilshowhost Rival RC61 I looked it up and it is still available. At around $25 it's a bit more expensive now, although still worth it to me. One thing I love about it is the simplicity. You just flip a little switch. That's it.

Yeah! Although it did not taste of the chickpeas at all, really strange, would make with peanut butter next time I think as I prefer that and it's cheaper or maybe homemade

@@mrbarrylewis I've seen a few at my local supermarket by a company called Boar's Head here in the states, they have a dark chocolate hummus and an apple pie hummus. Never tried them, but dessert hummus could be a neat video idea for you in the future 😁✌️ thanks for the fun vids as always Barry!

Just for mentioning it: you throw away the juice of the chickpeas - which is aquafaber or in other words: you can use this as an eggwhite replacement! well... don't tell Phoebe!

forage seaweed? you gotta get a forage partner! like atomicshrimp! also barry, please use dill more often for taters, u can mix dill with cold butter, salt and pepper to make a interesting flavoured butter that is a alternative to parsley or garlic

The hash brown thing didn't go brown because you didn't remove nearly enough water from it. As a result all that's happening is it is evaporating the water and the oil can't get hot enough to brown anything. Next time, do the cheesecloth method you mentioned! You can do it with a tea towel too.

I think the lack of browning could also possibly be due to the fact that he put the potatoes in before the oil and pan ever got hot.

Back when I was living in Japan, to save money, sometimes I ate rice with furikake, and it was so tasty. There are tons of different flavors of furikake.

Rice cookers are 100% amazing. For ten years, I had one of the cheap models. It was okay and did the job, but it was very hard to clean. Then I splurged and bought a very fancy one by Zojirushi, which has a non-stick cooking bowl, along with a variety of settings for different types of rice. It was the best investment I've ever made in my kitchen! It's amazing and works perfectly every single time. For people who eat rice often, they're a great help in the kitchen. You can also use them to cook other things, like oatmeal, or more elaborate dishes. I like to make congee (rice porridge) or takikomi Rohan (chicken and mushrooms with rice, a Japanese dish); you can cook both dishes completely inside the rice cooker. You can also cook cakes and other things. It's surprising! Good luck in the kitchen. :-)

A NINJA FOODIE is better as you can cook perfect rice in the pressure cooker and you then have 8 other cooking functions. I only use my oven now for pizza

There's something my German grandmother used to make like the galette - you take boiled potatoes (there are always leftover boiled potatoes in a German household) that have been cooled, shred them with the grater, and fry them in butter. One side only, you don't have to flip it, you just upturn it onto a plate to show the browned side. Serve hot with salt and butter and any other toppings (cheese, scallion, shallot) you like. Use a small pan so it's one per person, you don't have to cut it. Since it's leftover potato, you can make as few or as many as you want. Grandma used to make it for breakfast, from last night's leftover potato.

Definitely do the rice cooker cheap vs. steep video. I'd also recommend a video about a multi-cooker such as an Instant Pot or a Ninja Foodi. Also, given that you liked the chickpea cookie dough, you might want to try making halvah. If Phoebe likes vegetarian curries at all, and chickpeas, then definitely try making Chana Chole (or Chana Masala, different name but same thing). It is a delicious chickpea curry which can be either hot or mild according to taste. I'd also recommend Sambar, which is a wonderful lentil and vegetable soup which goes great either hot or cold. And not coincidentally, both are easiest to make in a pressure cooker like an Instant Pot, which is another reason to try one.

The NINJA FOODIE I have is perfect for cooking rice in the pressure cooker and you can also do soups, strews, casseroles and curries in under about 10 mins with one, I only use the oven now for pizza

You should look for the rice vinegar that's already seasoned with the sugar. It'll save a step and keep it from being too sweet.

Barry, you need a rice cooker! Honestly they're cheap as chips and it's just load it and walk away. And for the rice, find your local Asian (Indian or Chinese) and get a 10kg bag of your fav style. Works out so much cheaper and you'll have the best rice for any meal :D (Source... Wife is Chinese. Opened my eyes to good rice)

@@Miphawellspring tbh there aren’t many Chinese rice dishes. Rice is much more like a desert. An after dinner palate cleanser. My fav are things like ma la rou. A spicy beef mince and tofu dish.

I you don’t need a rice cooker just get a NINJA FOODIE you can cook perfect rice in the pressure cooker and then you have 8 other functions for cooking. I don’t use my oven anymore unless I have pizza

I'm Swedish but even I got offended when I heard baked sushi, as for the rice cooker, I have one from Tupperware that you use in the microwave that makes rice really well and easy plus it will probably be cheaper than buying a machine rice cooker.

Aww, kind of disappointed you didn't try to bake the "cookie dough", just to see what happens. Would it even form into a cookie at the end?

With the lack of stabilizers I’d say probably not, or it’d at least be a really crispy cookie. Definitely worth a try though!

I'd absolutely LOVE to see you a do video about foraging for Seaweed and cooking it!!! Cool little fact about seaweed, there's over 12,000 varieties of seaweed worldwide and nearly every single one of them is actually edible! Although some are more nutritional and palatable than others, and some can cause stomach upset if eaten in large quantities! It's pretty amazing the things you can do with seaweed, and just how versatile it can be in the kitchen! Whether it's used fresh or dry, used as a seasoning or to make broth, as thickener or in salad, as a side or main course...Just so many ways it can be used! There's even a few traditional UK recipes that use seaweed, like laverbread which is a traditional ingredient in Wales (IIRC, it's very common breakfast dish there.) I really hope you do make a video like that, as I'd love to see what you'd do with it and what you're thoughts are on it!

We call the potato one "rostie" in my country and it's one of ng favorite ways of eating potato. I personally love with creamy cheese and turkey, and a lot of black pepper and oregano

The YumAsia rice cookers work very similarly to a Zojirushi, but cheaper, the results are amazing.

I understand that the liquid from canned chickpeas (it's called 'Aquafaba') can be whisked up and used like eggwhites, Barry. As you're not far from Wales, how about foraging for Laver (pronounced LAY-VER, by the way), and turning it into Laverbread, and turning that into Laverbread, bacon and oat breakfast cakes. They are so very good.

Barry, I'm 99% sure you used sesame seeds. Black sesame exists and poppy seeds are a lot smaller and round lol

Yeah, the first bit of seeds definitely looked like black sesame. The second bit were more like poppy seeds with their roundness & grayish hue.

Barry canola oil is basically rapeseed oil. I’m a scouser living in Florida and have adapted many recipes to what I find here over the years. You can go high range rice cookers ($200) but what I mainly see here in Chinese buffet restaurants is the mid range ones ($60). We don’t eat enough rice in my family to buy one I rinse till clear use the salted water knuckle ratio and get perfect rice every time👍🏼

kitchen hack: easy way to drain cans : pop the ring pull or 1/4 open the can of chickpeas and just lay on draining board and drain into sink while u prep other ingredients

I used to make (sometimes I still do!) 'cookie dough' yogurt for breakfast. I mix greek yogurt with peanut butter, maple syrup, some vanilla, and chocolate chips!

Loved the video and genuinely surprised by how the sushi bake turned out! If it helps for the future, Furikake (Foo-Ree-Kah-kay) is typically roasted seasame seeds (can be white and black together), chopped up nori (dried seaweed), salt, and sugar. It's like a topping or seasoning and honestly, tastes best just sprinkled on top of fresh sticky white rice! Also definitely please try out a rice cooker! A quality one will absolutely change your life, you'll just have to play around the first few times to get the rice to your preference. I know a lot of chefs and food type people say to just learn to boil the rice in a pot, but trust me, every Japanese household has a rice cooker and it taste great! (Growing up, forgetting to turn on the rice cooker before mom came home was the equivalent of forgetting to defrost the chicken-) Also also, if you can try to find Japanese rice (uruchimai | Oo-roo-chee-my). It's surprisingly very specific with how it cooks up nice and sticky and plump. So it does taste a lot different than medium grain or long grain rices that you might have in like a Chinese dish. It can be pricey since it can be imported from Japan or some states in the US, but it's well worth it!

Yorkshire tea is in the hands of Barry, soon we will have the Spiffing Brit of cooking after the one of gaming! ❤ For the furikake, it's mostly seasoning for white rice, you put some over, eat them together, then repeat for the next layer. Since there is tons of furikake mix you have endless options, and like you said white rice is bland, it is made to fix that issue.

I just tried the sushi bake one! Loved it! Did 200degrees in the oven for 20 minutes, and crushed the nori to mix in with the rice, and did one layer of nori between the rice and fish. 10/10 highly reccomend!

Seaweed is commonly eaten snack in the part of Canada where I live. It’s a species of kelp that is harvested from the beach at low tide and dried in the sun. I love it.

Sainsburys have upped their game at providing a proper Asian aisle. Always good to check out a proper international/Asian food supermarket for variety and choice, but the fallback of having a lot more non-Indian Asian ingredients at a mainstream supermarket is great. My local Tesco hypermarket on the other hand has one side of an aisle mixed between Eastern European, Caribbean and Asian under the title "World Foods", and these are speculative snack products rather than ingredients for home cooking.

I got a cheap rice cooker during black friday like month last year and it's really handy, and if you're going fancy the zojirushi brand is really good. Plus you can do a lot of non rice recipes in a rice cooker. So more video ideas

May I share my favorite tea flavor with you? The tea itself is any orange spice flavor, I boil a pot of water, add a few tea bags with some lemon & orange slices & a cinnamon stick. Once it's steeped I ladle some into a mug & add some honey or sweetener, it's great with dairy free creamer as well.

I have two rice cookers - one I've had for 20 years that I bought off amazon, the other I bought for 5 dollars from a garage sale. Both work perfectly well, and I never have to fuss on the rice, or steaming vegetables.

I have a sistema microwave rice cooker and it’s my favourite item in the kitchen! Makes great rice every time, perfect in my humble opinion🍚

Just get a NINJA FOODIE you can do perfect rice in the pressure cooker and then have 8 other cooking functions, I only use the oven now for pizza

Good vid. Always thought potato galette was thinly sliced potatoes. Grated potato is more like a hash brown or a rosti. As a suggestion for potatoes try an irish Boxty.

That potato recipe looks lovely! But you should try out this traditional Italian dish from my area (north-east, Trieste) FRICO. Please look it up! I bet you would love it! It's a big thick potato, parmisan and other local cheese(and bacon and onion if you wish!) pan fried patty.

Zojirushi is the ultimate rice cooker brand. The fuzzy logic micron versions. They do more than just rice and yes it does make a difference. The low end is any of those 1 push button ones. Those are quicker than any fuzzy logic ones in cooking time. 20 mins vs 60 mins. However the results are significantly better with a Zo. Can’t wait to see what you think.
