recoil53 just for an update, I did check. It was the twix episode and she does temper it correctly on the first try (she just had to restart one bag of chocolate because she bagged it wrong, which isnt really a tempering fail)

Listen, I should be telling you this but it's stuck in development hell. We're talking about Fan4stic levels of problems here. The initial screening didn't go over so there's been rewrites. Claire isn't happy with her contract so we're working on a CGI version to cover the reshoots. You ever do CGI hair? Getting the streak right has kept me up for months. The rips in Andys shirt? That's all CG fanservice. And we haven't even begun adding Chris into the background. There's a reason part 3 was released first (Chris makes doughnuts).

I would say the one time when you might want to poke holes in a burger is if you are steaming it like White Castle or Krystal do. But how many people are going to make steamed burgers at home?

@@nanoflower1 Actually, they're not steamed: they're grilled on a steam-heated griddle, which limits the temperature to 212F/100C, thus slow cooking them. Also, the holes are filled with finely chopped onion which cooks in the rendered fat, which then diffuses throughout the "slider" imparting an onion flavor throughout. That low temp also doesn't allow for much of a crust, but it does tend to minimize shrinkage.

These same tips apply for meatless or veggie burgers. Add some fat, make a good sauce, season before cooking, and don't let the bun get soggy.

@@42sonja I don't toast them on a toaster. Butter up the griddle/cast iron/whatever pan you're using and toast the cut side that way. Then slap your patty on there. Works great every time and you don't even need to turn on the oven

BA's staff is so knowledgable and nonjudgemental. They always know that everyone starts somewhere, and that everyone has their own preferences, but they also give wonderful advice and cater to people who can cook on all levels. Plus they're all so pleasant and kind :, ) Keep doing you, BA!

When I worked at Steak N Shake, the rule was MR KOP on top. So, mustard, relish, ketchup, onion, pickle. Everything else on bottom. Made a more stable burger.
