My kids love eating bagel and they have literally tried almost all the famous bagel in Singapore. I always thought that bagel is difficult to make because it is delicious and uniquely shaped. Until I chanced upon Sophia’s recipe on youtube and it seems easy.
Believe it or not, but this is my first attempt and it turned out beautifully. Shouting out to Sophia, thanks for such wonderful recipe - • New York Style Thermom...
Bagel
1. 290g water, 1tsp yeast, 1tsp barley malt syrup 2min/37°C/SP2
2. 500g bread flour, 1tsp salt 2min/knead
3. Let it proof for 1 hour
4. Divide into 10 equal balls and shape, rest another 10min
5. Boil water and add sugar (10g sugar to every 500ml water)
6. Drop shaped dough in it. I like my bagel less chewy, so I boil each side for only 10 sec, but if you like it more chewy, you can boil up to 30 sec per side
7, Brush egg white on it, you can either leave it plain or add sesame seeds or some other grains
8. Bake in oven, 230°C for 15min
Cream Cheese
1. 1 litre milk, 12min/100°C/SP2 (please check, it really depend on the temperature of your milk, once it is boiling, you can stop)
2. 3tbsp vinegar, 4min/60°C/RSP2
3. Strain in cheese cloth or filter. Once filtered, you can add salt, herbs, whatever you want and stir.

6. 將麵團放入沸水。我不喜歡太有嚼劲的贝果,所以我每邊只煮 10 秒,但如果你喜歡更耐嚼的,每邊最多可以煮 30 秒
7. 在上面刷上蛋清,保持原味,也可以加入芝麻或其他一些穀物
8. 烘烤230度, 15分钟
奶油乳酪
1. 1升牛奶,12分鐘/100°C/SP2(請檢查,這取決於你牛奶的溫度,一旦沸騰,你可以停下來)
2. 3湯匙醋,4分鐘/60°C/RSP2
3. 用滤布或過濾器過濾。過濾後,您可以添加鹽、香草等任何您想要的東西並攪拌

About the Video Equipment

Lovely bagels They do look a bit overly crunchy Also i notice most people just dip boiled bagels in toppings, is there a reason you chose to do egg wash? Also i notice the cream cheese appears to have a ricotta sort of consistency Have you found novel ways to improve that?
