When I think of MacDonald breakfast, I would think of English Muffin.
I heard that there is a very good English Muffin by Model Bakery at Napa Valley. Winfrey Oprah loves it and I was curious. I found this recipe and gave it a try converting it into Thermomix method.
It turned out to be super good, I call it the gourmet version of English Muffin.
Ingredient: -
For starter dough (A)
- 60 ml water
- 75 g bread flour
- 4g instant yeast
For main dough
(B)
- 300g water
- 4g instant yeast
- 20 ml olive oil
- 5g salt
- 500 g all-purpose flour
(C)
- Some semolina
- Some ghee
1. Prepare the starter dough the night before, pour (A) in, 2min/37 °C/SP2
2. Leave dough in mixing bowl and leave in room temperature for an hour then keep in fridge overnight. Try not to exceed 8 hours.
3. Next morning, add (B) 2min/37 °C/SP2, then 3min/knead
4. I cut the dough in 80g, and shape it in round balls. Sprinkle semolina over and let it rise for another hour.
5. Pan fry with ghee
说到麦当劳早餐我就会想起英式玛芬。 在美国有一家烘培店叫 Model Bakery, 据说是奥普拉的最爱,我最近拿到了食谱就尝试改成美善品的做法。有空就来试试吧!
材料: -
发酵面团(A)
- 60ml 水
- 75g 高筋面粉
- 4g 酵母
主面团
(B)
- 300g 水
- 4g 酵母
- 20ml 橄榄油
- 5g 盐
- 500g 中筋面粉
(C)
- semolina小麦粉
- ghee 酥油
1. 前一晚先准备发酵面团, 倒入 (A) in, 2min/37 °C/SP2
2. 把面团留在主锅,留在室温一个小时,然后再放进冰箱过夜或8小时
3. 第二天早上, 把 (B)材料加入主锅 2min/37 °C/SP2, 然后 3min/knead
4. 我把面团切成80克再揉成球状,撒小麦粉再醒面一个小时
5. 倒入酥油,慢火煎
