बैंगन भरते को अगर चूल्हे या कोयले की सिगड़ी पर भुना जाए तो इसका टेस्ट कई गुना बढ़ जाता है। इसमें फ्रेश मटर के कुछ दाने और अगर हरी प्याज की बारीक कटी पत्तियां मिला कर बनाया जाए तो उंगलियां चाटते रह जाएंगे। इसे आजमाइयेगा जरूर।👌👌👌👍

In Madhya Pradesh we have a tributary of Narmada river called as 'Varman', a special green eggplant - bhata is grown around that specific region near jabalpur and it makes such an amazing bharta. I personally think that the green eggplant tastes better than the purple eggplant.

Green eggplant is also grown in the Khandesh region of Maharashtra (Jalgaon, Idlabad). That region is famous for its bharta. Special dhabas and outlets have come up that only offer "Bharit puri"

Crucial tip of making bengan bharta -: कभी कभी बेंगन में किडा होने की संभावना है इसलिए बेंगन को आग से निकालने के बाद उसको खोल के देखें की कोई किडा तो नही अंदर. और बाद में कट करें
