I like the mouth feel of oat fiber better than the bamboo fiber. The bamboo fiber feels really drying in my mouth.

For me the taste and smell of oat fiber is revolting, so im hoping bamboo fiber can replace it, or part of it

I wanted to see if anyone would talk about how it taste. Saves me from wasting more money on these flours. For now I’m going to stick with almond and coconut flours. I’ve tried oat fiber, and Lupin flour and hated how they both tasted🤮I still have both sitting in my house a year later and I feel like I wasted my money.

@@JanetsDeliciousLowCarbKitchen - I'd like to try this stuff, but it seems too expensive - far more costly than regular wheat flour. If it had a comparable cost to wheat flour, then I'd try it for sure. I don't see why it's so expensive when bamboo is literally supposed to be the fastest-growing plant on Earth. I bet if more of this stuff was cultivated to make flour with, then we probably wouldn't have any carbon problems in our atmosphere.

I love that you're having a play with the bamboo fiber!! I use it all the time; can't wait to try this one! I'd be more interested in dinner rolls, though. Do you think if I used silicone muffin trays I'd get something like those? Thank you!

You're welcome. Yes if you put these in a muffin tray you probably can use them for dinner rolls. They'll probably be more of slightly crusty dinner rolls but still will taste good

You can use konjac powder or psyllium husk powder to replace the xanthan gum. If you use psyllium husk powder increase to 1 1/2 tsp

I have bamboo fiber and have just not gotten around to using it but I am going to try this recipe tonight or tomorrow. Do you suppose you could make buns with this batter? I have the silicon buns pans and since I live alone I like to cook those instead of a full loaf of bread. If so, what do you think the bake time would be? 30 min? 45 min? I love your channel! Thanks for all you do!

Yes you can make these into buns.I would check them at 25 minutes and if they don't look done cook for another 3 to 5 minutes

I make an einkorn loaf when I am severely jonesing for a wheat loaf (I use the whole wheat variety). It is a lower-carb, higher protein and high fiber option, and although it is lower in gluten, it is not gluten free. It has a wonderful, nutty taste. One caveat - it does make a sticky dough, and a dense loaf. Super yummy! I like to add seeds too sometimes. Check out thefarmerslamp recipe for a basic loaf. I do like bamboo flour, but I had to work my way up to it slowly as it ran straight through me, so to speak....

@@michaelwalters5861 Actually it's lower carb than traditional wheat flours, and lower in gluten too although not gluten-free. It often use a half-einkorn, half-bamboo fiber mix for baked goods, remembering to use a tad more moisture due to the bamboo content, and to let the dough rest a bit (as one would do with coconut flour to hydrate). Make sure to use enough (aluminum-free) baking powder to compensate for the lack of gluten in the rise!

I haven't tried it yet, but I have all the ingredients, so will make it soon. I have a question, though: why boiling water? Could I just use 110 so it doesn't kill the yeast and it would rise more? Or possibly put the boiling water and ground flax together, let it sit til it cooled, then combine with the dry ingredients?

You need the boiling water to soften the seeds and fiber so they can absorb the moisture. This gives the bread a softer texture. The yeast in this recipe is for flavor only it doesn't really affect the rising. The baking powder is what helps this bread rise.

Bananas are not low carb so I don't usually use them. I have a couple of almond flour banana bread recipe and a coconut flour mock banana bread recipe that uses banana extract instead of bananas

This bread certainly sounds tasty. Bamboo fibre seems to be the big rage in keto baking lately. Unfortunately in Canada bamboo flour is not available. Anywhere!! Not even on Amazon 🇨🇦 or 🇺🇸 😢 I did email Modern Mountain to see if they deliver outside the USA? Many US suppliers don’t ship to Canada or internationally.

It is very good for blood sugar. My husband and I haven't noticed any stomach issues. Just don't eat a lot at once until you know how it agrees with you.

Over all which one do you prefer. Could you reduce the amount of xanthan gum to keep from being sticky or gummy. Or would the physillum powder be better or would it still have the sticky / gummy texture. I read that you are not supposed to consume more than 2-3 tbsp flax seeds a day causing you to consume too much fiber. Also flaxseed flour has trace's of cyanide in it. Just something I read. I was searching for an alternative flour to use other than almond flour due to the high oxalates. The flaxseed meal was going to be my go to flour until I ran across the information I just shared what a bummer. That article was on some baking forum. It seems that everything nowadays is bad, I don't know half what you hear or see is true just saying. What's your thoughts on this.thanks

I prefer bamboo fiber when it comes to bread. As far as the flaxseed I use finely ground flaxseed meal so you're not consuming the entire seed. This makes it much easier to digest. Also you won't be consuming the whole loaf in one day just a couple pieces at a time. Using psyllium husk POWDER will most likely reduce the lightly moist center. After I sliced and stored the bread in the refrigerator the moist texture seemed to go away. It also toasts very well on the stovetop.

I like quick bread so I haven't tried activating the yeast for it to rise but it might work. The only thing that might be a problem is there is no gluten. Gluten free breads have a tendency not to rise as much as gluten breads. If you try it and it works let me know. I like to toast my bread on the stovetop. It may be too short for the toaster.

Even if you used 1 tbsp of maple syrup it would have very little carb impact in a whole loaf

Excellent, ill try this later today. A question, when you say"egg white protein powder", is that just egg white powder? I cannot stand the taste or smell of oat fiber, i tried yesterday and it just turned my stomach.

@@adelaidesousa9020 yes you can use 7 fresh egg whites to replace the egg white protein powder. If you do you'll need to omit the 1 1/3 cup (260ml) room temperature water from the recipe

There is a Deirdre keto bread machine recipe on KZfaq , it’s from 7years ago, but I make it all the time in my bread machine and I’m very happy with it. I use bamboo fiber, golden flaxseed meal and VWG.

I just tried it tonight, it looked okay, alittle wet in the crumb, it smelled great like yeast. But the taste. Yikes, wood mixed with cement. Something about it was just NOT edible texture wise. Whether it is almond or coconut or bamboo they just dont seem to bake into any different. I'm going to give the oat fiber another try. I did it years ago, and I remember the texture being edible with the wheat gluten and flax seed.

Every time I bake any keto bread, the center never seems to bake no matter how long I bake it. Always gooy in the center.

This is definitely not gooey but the xanthan gum does make it a little moist. You can try maybe reducing the xanthan gum or using another binder.

Bonjour je viens d'essayer ce pain à la farine de bambou😮😢échec total! Il a l'air cuit à l'extérieur, l'intérieur est mouillé, pas cuit! Il a pourtant passé une heure dans le four à 350.
