UNFORGETTABLE SWEET & SOUR FISH CURRY
This recipe I learned from my “Mami” (aunt). This is so delicious that I still remember its taste since I was a teen. I hope this sweet and sour taste will also drive you crazy.

*Preparation Time- 10-15 min.
*Cooking Time- 20 min (approx.).
*Serving- 3-4 people.
Ingredients:
1. Rohu(rui)/Katla fish 500g (approx.).
2. Mustard oil ¼ cup + 2 Tbsp.
3. Onion sliced 1.5 cups.
4. Red chili (whole & chopped) 4-5 pcs.
5. Ginger + Garlic chopped 2 +2 Tbsp.
6. Cumin powder 1 Tbsp.
7. Turmeric ½ + ½ tsp.
8. Tamarind pulp ½ cup.
9. Salt to taste.
10. Sugar 1.5 -2.5 Tbsp.
Procedure:
11. At first, clean the fish and wash it properly. Then add salt and turmeric. Mix well.* Try to take large fish pieces.
12. Heat 2 Tbsp of mustard oil until smoke comes. For this recipe, mustard oil is required. If you don’t like it you can use vegetable oil instead of it.
13. Fry the fish pieces in the oil on medium-high heat for 6 min (approx.). Each side for 2-3 min.
14. Transfer the fish to a plate.
15. Heat another pan. Add ¼ cup of mustard oil and the fish-fried oil.
16. Fry 3 whole red chilies for a few seconds.
17. Add chopped garlic and ginger. Saute for 30-40 seconds.
18. Add the sliced onion. Fry until lightly golden.
19. Add ½ tsp turmeric and 1 Tbsp cumin powder. Saute for 10-15 seconds (max).
20. Add a little water to cook the spice. Add salt to taste. Cook on medium heat.
21. Gradually add a little water for 2-3 times to cook it nicely.
22. When the spice is cooked nicely add ½ cup of tamarind pulp. Cook it for 2-3 min. Please, do not use tomato puree or yogurt instead of tamarind. It will change the taste.
23. After that, add 1-1.5 cups of hot water for the gravy. Let it boil.
24. Add sugar according to taste.
25. Add the fish. Cook on medium-low heat for 3-4 min with the lid on.
26. Pour the gravy on the fish. We don’t need to flip the pieces. They may break.
27. After 4-5 minutes turn off the heat. Serve the curry in a serving dish. Enjoy with plain pulao or what you like.
