Ribs cooked on a Propane Grill
WHAT MALCOM USED IN THIS RECIPE:
- Killer AP Seasoning bit.ly/TheAPRub

Gas Grill Rib Recipe
- 2 racks of loin back ribs - trimmed and silver skin removed
- 2-3 Tablespoons yellow mustard
- 1/4 cup Killer Hogs AP Seasoning
- 1/4 cup Killer Hogs The BBQ Rub
For the wrap:
- 1/2 cup Killer Hogs Zero Sauce
- 1/4 cup Apple Juice
Directions:
1. Apply a thin line of mustard to each rack of ribs and season with the AP Seasoning and The BBQ Rub on all sides.
2. Fire up a gas grill adjusting the burners so the grill temperature is 250-275 degrees. Make a smoke bomb by adding wood chips to a small pan, cover it with foil, and poke holes in the foil. Place the pan to one side of the grill centered over a burner.
3. Place the ribs on the grill and cook for one hour, flip the ribs over for even grilling and continue to cook for another hour.
4. Wrap the ribs in a double layer of aluminum foil - add a little extra dry rub, zero sauce, and a splash of apple juice to the wrap.
5. Return the ribs to the grill and cook meat side down until the internal temperature reaches at least 202 degrees between the bones. It should take about an hour.
6. Carefully take the ribs out of the wrap and place back on the cooking grate. Season with additional dry rub. Cook for 30 additional minutes to set the bark at this point you can sauce the ribs for a "wet style" or serve them dry

You can use a Smoker tube with Treager pellets and throw it into the gas grill. Set it to 250 and BOOM your gas grill is now a smoker! I been doing this and get SUCH GREAT FLAVOR!!!!!! I got a few smoker tubes on amazon. Love it much better than wood chips or smoker boxes. Smoker tube with pellets (especially the 12 inch long one) can last hours with consistent smoke! You can preheat the pellets during grill warmup to dry them out and help keep them lit while burning. LOVE IT

It's serendipitous that the day you posted this, my wife brought home two racks of spare ribs for the new propane grill. I've never cooked ribs on a propane grill before, but here were the instructions laid out before me. The ribs have been on the grill for an hour and a half, and I'm just looking forward to trying them out! Thank you for not only the inspiration, but for breaking this down Barney style. I use a Weber Natural Gas grill I use. I got a stainless chip box I use for steaks and stuff I put between the grate and burner all the way to the back and in the middle when I go to heat up the grill. I like gas for my everyday because I don’t have a lot of time most days. I’d like to have a grill like this next time though possibly.

I think you’re smart doing this Malcom. There are a lot of your followers who are maybe newer to BBQ who only have a propane grill (I used to be one of them.) if they get the bug, they’ll eventually move on to charcoal or wood, but there are not many people with your pedigree on YT showing good gas grill content. 👍🏻

It’s a long time coming. I’ve made some good ribs on a gas grill just by searing it at high heat for color, then wrapping in butcher paper and cooking at 250F for a few hours. It turns out great, just as the video says, but you taste the meat more and don’t get a smoky note.

Awesome work there. I have 2 propane grilles and will be converting one of them to natural gas next time my plumber shows mid June. I love the speed of gas and I understand the flavors of charcoal. I cooked with charcoal for 30 years but now I like the convenience of propane/gas. Thanks for that video.

Looks great, but how much propane did you use? Just curious if you need to have an extra tank handy. I might try this if I can get the propane side of my duo to hang out at temp.

You should ALWAYS have an extra tank handy. Even without years of experience propane seems to run out at the most inconvenient times. That being said 250F is a very very low setting and a thermostatically controlled grill is super efficient. One full tank will be sufficient for at least 3-4 rib cooks

Hey Malcom great to watch another video. I have a question I am asking for a friend. How would you cook ribs on an old time gas grill, you know like a Kenmore or maybe a Montgomery Ward style from the early 2000's. That's a really nice grill but we can't afford that high end product. Thank you.

Traditional seasoning is pepper and salt at a minimum. Best results are with some variation of SPGO (salt pepper garlic onion). You would NEVER choose garlic salt or onion salt because you want to be able to adjust the radio to taste which is impossible with those. Additionally you want the garlic (and onion) in granulated form rather than powder. There’s really no use for premixed garlic powder around a grill or smoker. The mustard isn’t a seasoning at all - you won’t taste it at all in the end. Mustard is just used to get those dry rubs to stick. Without a binder you get a lot of bare spots and waste a lot of rub

I have a Char-Broil brand, four burner gas grill. I have verified the thermometer in the lid with an oven thermometer sitting directly in the center, on the grates, and it is dead on. With the two outer burners at their lowest setting for indirect grilling, it will register and maintain 225 F all day long (except in the middle of a North Dakota winter, when I have to tweak it up a tiny notch). With two smoker boxes sitting above the outside burners, I can approximate a pretty darn respectable "smoker". Thermostatic control would seem to be a waste on my grill.

He doesn’t cook with propane. He said he prefers a smoker several times. This was just a reluctant experiment to keep cranking out new content. After years of weekly KZfaq videos you reach a point when the ideas start to thin out. People expect a new TikTok almost every day. If you listen to the podcast he’s putting out a lot of lower quality self at higher volume just to see what works. Social media content creation has become a vicious cycle

You can ramp up the smokiness with a legit smoker box. You can even add 2 of them in there.
