Over the past couple years I made 2 failed attempts at brisket. So I followed Franklin's technique as precisely as I could. The result: Delicious melt in your mouth brisket with a beautiful smoke ring that passed the pull test with flying colors. Thanks, Aaron.

Recipe: (For your convenience) *** "Smidge" converted to Tsp below *** "Part" converted to TBSP below For Brisket: 1 TBSP Pepper 1 TBSP Kosher Salt 1 Tsp Onion Powder 1 Tsp Garlic Powder 1 Tsp Chili Powder 2 Tsp Hungarian Paprika 1 Tsp dry mustard powder For Pork rub add : 1 TBSP Pepper For Chicken rub add: 1 Tsp Brown Sugar

I use both brown and white sugar in my rib and pulled pork recipes and the results are outstanding. For brisket it's kosher salt, cracked black pepper (10-16 screen mesh) in about a 50-50 mix, a dash of cayenne, two or three dashes of ancho chile powder and a half teaspoon of espresso-grind coffee. The bark is to die for! I just wish I could afford a Creekstone Farms brisket to apply it to!

You hit the nail on the head with this one Aaron. There are hundreds if not thousands of rub recipes all over the Internet. This is barbecue, and people should take pride in what they create so why not a rub?

Great info on the rubs. When you're new to bbq it can be a little intimidating and even overwhelming....until you realize it's not. To see a pitmaster of your caliber completely chill and relaxed, actually having fun, it can be very encouraging. Thanks for the excellent video. 😁👍

I use 1 part salt (kosher), 1 part pepper (fine), 1 part Garlic powder, 1/2 part cayenne and a sprinkling of onion powder.

The rub in this recipe looks really good. I made a rub that was influenced by the Milwaukee Spice Blend from the Spice Company in Chicago. It includes salt, pepper, garlic powder, cumin, chili powder (more than the rub shown in this video), and a pinch of cayenne pepper. It would be good for most barbecue if you add a sweet bbq sauce on top of it. I would omit the cayenne pepper though if I'm cooking brisket or dry ribs.

Hungarian Paprika, it's nice to see my favourite spice from our country in your video! I'm lucky, because my father produces paprika in his garden, so I get top quality paprika. Kalocsa and the surrounding villages are quite famous about their paprika.

I've seen guys do pork butts with crazy all sorts of stuff being added to it during the cooking / smoking process. I sense that every time Aaron cooks a pork butt he mimics the last time he did the same pulled pork, with the same type of rub. Aaron you're a great teacher.. Thanks..

Not the flavor I was looking for . However extremely good rub advice. The flavors are extremely well balanced. Really shows of for each flavor in the rub. especially if you do not want to experiment. Remember everyone to taste as you go!

I've never seen a Pork Butt or Rib rub that didn't contain sugar. You gotsta have some sugar on the pork. Maybe not in Texas, but that's how we roll in Missouri.

Soulman1282 nah, we do it here in Texas too. But black pepper is king. To me, I skip the dry mustard. Most of the brand's I find are bland. I also find Tamarindo powder kinda useful. If you can find it.

I do it like this but I also sometimes throw in a little ground fennel and rosemarry for tri tip and fennel and a little ground anise in my chicken rub

Instead of using brown sugar I've seen a lot of places use turbinado sugar cause it doesn't have a tendency to burn

Aaron, am I correct in assuming that your reference to "chili powder" is the pure pulverized chili pepper, and not some compound of chili pepper, cumin, salt, etc?

Garlic Powder and Onion Powder or "Granulated" for each? I always heard granulated was better and wouldn't cake or clump. At least if making a bunch and storing it for a while. Making it same day as you use it then maybe it doesn't matter or would the powders soak into the meat more?

I guess he doesn’t do this anymore? In the MasterClass he says only salt and pepper on everything. A little paprika on pork ribs for color. He didn’t put any of that other stuff...

Question, I use brown sugar in my rub for my brisket when I'm smoking at least 12 hours. Is it not recommended to use sugar even when low and slow??

If you like a burnt, carbony, charred taste on your brisket bark, then leave in the brown sugar in.

Maybe a spice grinder? I don't think sifting would make much of a difference In Breaking down the powders, so maybe a grinder wouldn't hurt it?

I like these bbq web/tv videos Aaron does but this is exactly why I'm not impressed with homemade rubs; they all revolve around the same basic 6 spices. To make anything more complex requires having a lot of other spices on hand that I may or may not use for anything else before they go stale. With the diversity of spice blends that are readily available on the internet, I'm going to let someone else do this work and I'll focus my time and energy on cooking the meat properly and maintaining a real wood fire for my barbeque.

I was going insane trying to develop a rub I was happy with... until I found a store-bought rub called Killer Hog. It's the cat's meow and awesome! I use it on pork, chicken, fish and beef. Made some chicken thighs last night (with Killer Hog BBQ Sauce, and guests were left screaming for more. No more insanity for me, only Killer Hog in a shaker. Got it at Amazon at a pretty good price.

Some people don't care for going through 10-20 pre-made rubs until they find the right one. I know I like the taste of black pepper and mustard, so I would purposely add a bit extra to my custom rub. What sucks about a lot of the pre-made rubs is that they're obviously meant for mass production and selling, so they will likely have a lot of extra crap in it for preservation and likely to avoid clumping over time. I don't know about you, but I'd rather just have the ingredients I want, and not a bunch of preservatives and other chemicals to make the product look pretty longer.

Course sea salt. Or Non-iodised table salt - just not as much of this one as it is finer than kosher salt.

Not sure if Franklin's BBQ will ever answer me but, why do you use onion and garlic powder here for brisket but in the brisket video you only use salt and pepper? I was just wondering because I have watched your videos millions of times because you make the best BBQ in the country yet it seems so basic. Not at all saying anything bad otherwise I would not be still trying to perfect my Q. Love your video's and your BBQ.

This is a more complex BBQ flavor rub. The salt and pepper is the Texas style rub.

"really long cooks, sugar tends to burn. Chicken is a quick cook...". This makes no sense! Chicken is a quick cook when it's cooked medium to medium/high heat - which will burn the hell out of your sugary rub. Long (low & slow) cooks are performed well below sugars burning temperature.
