@DrivableNote I forget what wok hei translates to (maybe breath or life?) but it’s basically a flavor you can mostly only get from a wok. The high heat and large surface area of the wok (also the skill of the chef knowing the timing and heat from experience) breaks down the fats and oils in a way that you can’t get from a regular pan. It’s kinda like the smokiness that people talk about with good bbq

@@sirmr.mansavage nah nobody talks about it lol, its short for monosodium glutamate, it’s basically a type of salt that is found in some foods and tastes fire, like a savory salt. Lots of people say it’s super bad for you but I don’t think it’s any worse than regular salt in moderation as it’s used in a ton of eastern food

Ive seen Chinese restaurant use so much cornstarch slurry that now I'm positive y'all have like a dispenser or just a huge bucket of it sitting on the table or floor with a mixer contraption build in so the cornstarch don't settle at the bottom of the container

@@Dustin21AI wouldn’t say it’s a dying art, but it does seem to get real authentic Chinese cooking in America you’ve gotta be in or near a major city, Boston has some amazing authentic Chinese food, but I live an hour from there and the places near me are just generic places that all serve the same stuff. With the acceptation of a couple gems here and there.

Also, is yum yum MSG? 😂 I hope so, I hate how so many places don’t use MSG anymore cause all the Karen’s claim it “gives them a headache”. MSG adds sooo much flavor and there is no solid evidence it does any of the negative things people claim.
