Best Ever Squash Casserole~Summertime Sunday Sides

Squash Casserole
2 to 3 cooked squash
1/2 cup mayo
1/2 cup onion
1/2 cup greed pepper
1 4oz jar diced pimentos
1 cup grated cheddar cheese
1 egg beaten
salt & pepper to taste
1 pkg or 2 cups herded bread crumbs
1/2 stick of butter melted
mix all ingredients except butter and bread crumbs. pour in prepared Casserole dish. to I with buttered bread crumbs and bake at 350 for at least 30 minutes.
Remember you can add chicken to this and make it an entree.
You can also saute your onions and peppers before adding them if you like.
Bread crumbs work much better than the Stuffing mix but it is a good alternative if you don't have bread crumbs.

How appetizing! I can tell Bryant just loves your cooking, Leslie! Yellow squash is my absolute favorite! I definitely can't wait to try this one. I love green peppers too, but I think I'll use the yellow pepper. The pimentos are an awesome addition, too. Isn't it fun sharing good tasting food and simple recipes? So thankful. This dish brings all that!

I finally got to make the squash casserole today. I followed your recipe and your tips about sautéing the green peppers and onions before adding to the casserole. I found a can of Progresso Garlic and Herb bread crumbs to use for the topping. The casserole turned out great and it tastes so good!!! Thank you! It's going into my keeper binder for sure.

Oh yessss! I love squash casserole. Also another lower carb alternative. Yellow squash is so easy to grow but it is pricey at the store. Just one of those things to ponder. I used to make a similar casserole but I think I added a bit of cream cheese. I will have to try your version Leslie.

I make my squash casserole kinda like this. Boil squash and drain add mayo and lots of cheese and herb seasoning or stovetop {love the chicken flavor of it} and bake. I’m a picky eater and don’t like pepper or onions or egg in mine. But it’s amazing. Leslie you look amazing. Love your make up and hair. Have a blessed day.

I don’t use Mayo or eggs in my squash but do use butter. I use sour cream, can of cream of chicken, & Pepperidge Farm cornbread stuffing & layer the dressing with squash & bake

Hi! I have a suggestion for your Sunday sides. Lazy Pyrogies, It’s mashed potatoes with fried onions and cheddar cheese. Layer in casserole dish with lasagna noodles. Serve with sour cream Patricia Alberta , Canada ,

Hey Leslie I make something I call cauliflower potato salad however it doesn’t have any potatoes in it you cook your cauliflower leave it a little bit on the crunchy side drain well then put everything that you would in your potato salad o my goodness 😋 delicious your summer time squash dish 👀 looked so delicious thank you for starting this blog I have learned so much about doing different things ❤️💯🎯
