Hello Lovely family and friends, hope you are all doing well by God's grace. Last week I shared with you my zongo Waakye recipe. So today I want to share with you how I made the Waakye stew to go with it. I hope you learn a thing or two and and you enjoy this video. thank you and God bless you all.
**Ingredients**
2kg Beef
2kg Goat Meat
Fried Mackerel - Any quantity of your choice
Wele (Cow skin or cowhide) - Any quantity of your choice
Boiled Eggs - Any quantity of your choice.
Fresh Tomatoes
Chilli Powder
Canned chopped tomatoes
Red Onions
Brown Onions
Ginger
Garlic
Fresh Rosemary
Green Bell Pepper
Sunflower Oil to Fry
Bicarbonate of Soda / baking soda
*For Steaming the meat*
1tsp Chilli Powder
1tbsp Curry Powder
1tsp Aniseed
Homemade Spice Cubes (A blend of 2 medium Onions, 2-3 thumb sizedGinger, 6 Cloves Garlic, 1tbsp Aniseed)
salt tt

Cloves
Sage
Fennel
Oregano
Rosemary
Aniseed
Calabash Nutmeg
Cardamon
Turmeric
Curry Powder
Nutmeg
Black pepper
Thyme

Thank you so much my sister. I am going to re-watch your video two or three times until I get it. If I knew how to cook, I wouldn’t have fallen into the trap hands of some women growing up. I had been all books and my mom used to banish me from the kitchen. Sisters would call you foodian if you are a guy and hung around the kitchen too much or too long. I think that was bad aspect of Ghanaian culture when it came to raising boys. Two thumbs up 👍 dearest sister from another mother.

Thank you so much my brother from another mother for you kind comments. I definitely agree with you on that bit of our culture where boys are not allowed in the kitchen. For me I try to let my son in there to help. He actually makes most of their dinner. This recipe is not too complicated and with a a couple of views you should be able to replicate it. So happy I found your channel, loved it that you were not using the Maggi powder, I want to learn the authentic way. What language were you speaking, loved it when you mixed it up with English. I went shopping today at an African market and could not describe to the owner what it was I was trying to make, but I got a bunch of things including a hard chicken, some chile and crawfish flakes, and three kinds of powdered Fufu, they had the whole cassavas too but I am not comfortable letting it ferment right now. The dish that my son brought me one day from a Ghanian restaurant had okra and tomatoes, some spicy peppers in it, that is all I know, we will buy it again but I want to learn how to make it and I think it was gari that came with it. You are a great teacher

Hello Glory, thank you so much for your support. Apologies for late reply. I was speaking twi (a Ghanaian language) but don't be alarmed because everything I say in twi is a translation of what I've already said in English. So what I've made is basically what we Ghanaians call stew, we pair with rice, yam, plantains, potatoes, rice and beans. We sometimes add raw rice and cook it and we call that Jollof rice. All you need to do is to get the ingredients and follow the recipe.I will link all these recipes below for your convenience. We usually do not pair this stew with fufu we use soup instead. The dish your son brought, I believe is okro stew and banku (cassava and corn dough cooked into dumplings ) it could be eba, which looks like banku too but its made with gari. I will link all the recipes for you to check out, they are very easy to make, all you need to do is get the ingredients and follow the recipe. @@bezalea Thank you, I intend to watch all of your videos and I called a number of people to help me know what it was that I had from the restaurant, with no answer until I remembered that my niece had gone one semester to university in Ghana, about a decade ago, she said it was probably Okra stew. I could taste the okra more than see them, as it was more like a bulky sauce, we grew up eating okra. My niece will be visiting this summer and we most definitely will go to the restaurant.

Stew looks yummy but its advisable to add the salt after the stock has gone into the stew and tasted... so as to avoid stew being salty

No dear, because I used can tomatoes, usually the juices can serve as purée. If you using fresh tomatoes then you can add tomato purée to it. Hmmmnnn, the spices, our market women do not know the English names o. For instance if I go to the market and I say I want origano, thyme, anis, etc etc, the ordinary market woman doesn't know these names. Wish you had given the local names as well for easy buying at the market. Thanks though for the recipe.

I hope this helps. 1 tbsp Calabash nutmeg (Widie Aba) 21/2 tbsps Cloves (Pepr3) 3 tbsps Aniseed (Nkiti-nkiti) 3 tbsps Black pepper 1/2 tbsp African/Alligator pepper (Esoro Wisa) 1/2 tbsp Grains of paradise (Efom Wisa) 2 Star Anise (they call it Star in Ghana) 1 tbsp Grains of Selim (Hwentia) 3 tbsp Rosemary 1/3 tbsp Thyme 5-8 Bay leaves
