Marion, you won't believe how fast I clicked on the video!! I'm one of your Indian followers, have interacted with you a bunch of times on here but I would totally give you a massive hug if I could right now. Making biryani is not an easy task, there are many potential pitfalls if you are not accustomed to South Asian cooking. But you presented all the fundamental steps of making biryani in an incredibly clear way. I don't know if anyone could do a better job of introducing a biryani recipe with such easily source-able ingredients to a wider global audience. I can only imagine how much effort creating and testing this recipe must have taken. Thank you so very much for all the hard work. Lord knows there are ten thousand ways to make a biryani, but as someone who has studied so many biryani recipes, I can tell you this is THE fundamental method of making it. Also, your banana leaves at the end didn't go unnoticed 😉 Thank you for presenting it this way to the Marion's Kitchen family

I am Indian and this is almost perfect! I would recommend sprinkling some ready made "biryani masala" that you can get from an Indian store while layering. Secondly, a dash of rosewater or keora water and lemon juice at the end to give it an authentic touch. But seriously excellent work, Marion! Makes my heart so happy to see someone not from my culture get a biryani right. ❤️

Eww...no kewra water! It will ruin the taste. Be careful while recommending this to non Indians because they didn't grew up eating food with rose flavor and will find it a bit strange. Instead of liking the dish, they will hate it, especially if they are trying the dish for the first time. I grew up eating biryani without Kewra water and the first time I tried biryani at a Indian resto, I found that rose taste biryani disgusting! I can never get used to it. However, it does taste great with desserts like Rasmalai etc.

@Iron Butterfly kewra and rosewater are different flavours. This is just the traditional flavour in my part of the country and my friends in the west have really enjoyed my biryani. But to each their own of course! The good thing about food is that people can improvise!

Hey Marion,you nailed another Indian recipe yet again.But this time its a complicated one and Biryani is an emotion for us.Your efforts truly show,this one's a gorgeous Biryani indeed,and the sides are great too.I have a few observations: 1.The basmati rice needs to be really long-grained 2.Some of the lamb pieces were charred.One tip is to layer the bottom of the pan with bay leaves,secondly,you can use a hot cast iron skillet at the bottom of your pot,or thirdly,you can layer the bottom with parboiled potatoes.In some parts of India (Kolkata specifically),people love potatoes in their Biryani (and a boiled egg on the side). 3.The amount of herbs you put was quite a lot compared to the amount of Biryani you were making.So much mint and coriander would overpower the flavor of the saffron and the garam masala. 4.Meat on the bone imparts more flavour indeed,although boneless meat/meatballs or kofte are also commonly used. Please keep making more Indian recipes.May be garlic naan next time on your Indian series.And please do visit India.🥰

Nothing beats the Basmati variety of rice to make a memorable Biryani! It also benefits with a layering of tbsp or two of melted ghee, to keep the dish moist.

We Paris (also from India) fry some silvered almonds and sultanas and sprinkle them between layers of rice together with the fried onions. Sometimes also include slices or quarters of boiled eggs between layers.

I was thinking yesterday that Biryani is just so complicated dish to make, and that it would be nice that Marion does it on her channel. That was my thought yesterday before falling asleep. oh my godddddddddddd. this is right up my alley and seems super approachable. I've eaten about a thousand biriyanis in my time and this one covers off the basics and is a great entry point to the big wide world of indian rice dishes. cannot wait to cook this.

Awesome. Can go a little light on the herb's and fried onions in quantity. Fried onions are be crushed and mixed in meat/ lamb marinade to give authentic flavor in addition to layering on the top.

That Biryani is exquisite. Just a side note....That salad is called Kachumbar salad and the yogurt dip is called Raita. And these aren't optional with Biryani. They are essential. Much love and prayers to you Marion.

It's just biriyani...not biriyani rice.. ( bcos biriyani means a rice dish cooked with meat ) that would be like saying nan bread or chai tea ...totally redundant. But no biggie

I am British of Pakistani descent and your finished product literally looks like something served on Eid or at a wedding We also add partially boiled cut up potato as a way to add some more texture and the potato also absorbs all the flavours and turns a nice brown colour GOOD JOB ONCE AGAIN FROM MARION'S KITCHEN!

I think the amount of herbs would be perfect with just one layer. We don’t use too much herbs in our biriyani. I would recommend you to make kacchi biriyani which is Bangladeshi biriyani and it’s famous in our country and i can assure u that you will love it

​@@Marionskitchen I would suggest going with the Hyderabadi lamb/mutton biryani instead. They do the kachchi style. You were missing quite a few spices in the marinade. Like nutmeg, mace etc The lamb should be marinated with some of the fried onions.

Kachi means raw ... the meat marinated is used raw under the rice ... more marinating time and use raw papaya to soften meat pakki means cooked... liked the way you cooked the lamb

Wow. I am literally drooling here!! 🤤 your video 100% convinced me to make biriyani this weekend!! 🥰 this will be my 4th time making biriyani. In india, two more things we add, big pieces of boiled/fried potato and boiled egg, though it is very optional. This tradition is followed mostly in Bengal (Kolkata).

Indians have a few different versions of biriyani- one is this method in the video where rice and curry are cooked separately then put together at the end. Another method is where curry and rice are all cooked in one pot, this is a more risky method because it can be messed up if the ratio to curry and rice are wrong, but the flavour is so good and the ingredients are so much simpler and its very rich in flavour. This the style that is made in the south and what I'm used to eating, this is my favourite style personally. The flavour is quite different to method on this video. Its typically served with a spicy eggplant curry that is to die for and raita. You gotta try this version Marion! Also you gotta try prawn biryani its so good!

Second one is very difficult to try at home, because it is impossible to have recipe to clinical precision. It is typically done in restaurants, who have mastered over years exactly the same procedure, using same equipments and ingredients sourced from same vendors.

There are hundred variations of ingredients and methods to cook Biryani which alters the taste slightly especially from state and region to region to suit the local palette more. We have Kolhapuri, Peshawari, Lucknowi/Awadhi, Chettinad, Hyderabadi, Kolkata Biryani, Kacchi Biryani, Parsi Biryani etc and more

Great recipe, looks yummy. A few suggestions: 1. dehydrate the onions (using salt) before frying 2. wash rice before soaking 3. add mint to the initial marinate. lamb & mint are good friends!

I'm an Indian and I can tell you got it perfect. You nailed it. Personally I would sprinkle few table spoons of ghee right at the top after the layering is done. 👍🏼

This was awesome. Some other tricks if one doesn’t have thick bottom pan is to layer the bottom of the pan with sliced onions. Another one to spread the heat through the pan is to take the spoon handle and make dig through the rice vertically at few places so that heat can come through.

If you enlist your family members to make a lamb biryani it's a fam biryani. And if you add seafood it could be a clam biryani. If you went full Jamie Oliver on it, it'd a jam biryani (also a sham biryani). And if you play hair metal in the kitchen while you make it it's glam biryani.

One way to take this up a notch is to use extra long grain rice. The longer grain rices tend not to stick to each other so they stay separated. Short grain rices tend to stick to each other.

It's a leap of faith to cook rice without simmering in equal parts of water. I made the recipe and it came out great! Fluffy grains of rice, not mushy, not too hard, flavorful. Thanks!!!

Marion, a few tips, if you please. Add a mace flower, a full star anise, half a spoon of caraway seeds to the water when you boil the rice. I usually tie all the whole spices in a muslin bag and let the water boil with them for at least 15 mins. The water turns brown and then I add the rice. The aroma of that rice is out of this world. With saffron, try to find some rose water to add when you put in the saffron. In India we also add Kewda water... but I don't know what it is called in English.

Yummy, you got the patience to make this 😱, I had made a paneer biryani recently and that was a lot of prep, almost whole days job. It looked very yummy though, I would reduce the amount of coriander and mint. Where do you live, I am bringing my plate 😍
