Bitterballen
Ingredients:
- 700 gr. of beef.
- 1 medium onion.
- 150 gr. Of flour.
- 100 gr. of butter.
- 700 cm3 of meat broth.
- 3 eggs.
Required amount of:
- Oil.
- Bread crumbs.
- Curry.
- Salt and pepper.
- Water.
Preparation:
Put a little oil in a pot and cook the meat cut into small cubes.
When it has changed color, we remove it.
In the same pot, add the butter and with the help of a spoon, remove the cooking bottom left by the meat.
Add the onion cut into brunoise and sauté.
Add the flour and cook for 5 minutes.
After that time, add the meat broth and mix with a whisk to avoid lumps (cook over low heat).
Once the mixture has thickened a bit, add the meat, curry, salt, and pepper. Unify.
Place the preparation in a shallow tray and cover with plastic wrap in contact.
Once cold, put it in the fridge for at least 3 hours (I usually prepare it from one day to the next).
For the breading, we take small portions of dough, we pass them through flour giving them a spherical shape, by egg and finally breadcrumbs.
We reserve for 1 hour in the fridge.
For the second breading, we dilute the remaining egg with a little water (so that it is not so heavy).
Repeat the above process, skipping the flour step.
Fry in plenty of oil and serve with mustard.
