Point of order, balsamic vinegar skips the wine step and is turned directly into vinegar from the must after being concentrated. Whereas red wine vinegar is red wine that is turned into vinegar, which completely changes the flavor profile regardless of how premium the product is. You take an 8 year old cabernet, no matter how high quality, and turn it into a vinegar, you will get a product much closer to A than B. That last one was a pure bait and switch.

Indeed, it's a different product. I wouldn't put red wine vinegar on strawberries or ice cream. With balsamic you can totally do that and it's delicious!

​@@SortedFoodquick spinach info, my local famers maket lady recommended to keep the root stem (here on the premium spinach) in the dish, it adds a sweeter flavour and is also less food waste😊 (and is very commonly used in Italy)

It would be interesting if you did 3 price points. I often find that mid-price stuff is the most worth it, because cheap stuff is boring and expensive stuff is rarely good enough to justify the price. In practically every industry, it's the mid range producers who care most about quality. Too many expensive brands are more concerned with being fancy than being good.

This. It's basically a rule that for expensive products to be selling a name, instead of an actual good product, because for whatever reason, people will pay an extra 1200% upsale for a name or stupid marketing claim, and they will self-justify their purchase by thinking "its 1200% more expensive so it must be 1200% more better"

In many cases a "Cheap" brand can also be one of the better ones. I think the best general rule is skip the "bottom of the barrel" options, but don't go to high up the price tree. There are some products that do not have that option, but it works most of the time.

@@Ishlacorrin That's true, actually. In Canada, our biggest grocer, Loblaws, has a store brand called, No Name. No Name just sells simple, basic ingredients; Pantry staples like spices, pasta, flour, beans, broth, etc. But because it's a house brand, there's no middle-man, so they can sell decent basic foods at a decent basic price.

Cheap brands actually have to work for the customers money so they put lots of effort and opperate on thin margins Well known brands on the other hand put a lot of stock into cultivating the name and marketing and image but the actual quality is only so so. Not bad usually but nowhere near justifying the price

@@DimT670 The very best products get very little marketing at all. the company that makes them does next to no advertising. besides possibly sponsoring there very local sports club and a small ad in the very local paper. Those are more aimed at doing something back to the area where there employees live. The real marketing is just in there very premium product and the work going in to it. the effect often that the brand is often only used by those that really search for it. (often high end restaurants)

I have to say Barry has come such a long way from the original Pretentious videos. He used to be all about the novelty and the expensive versions but now he’s all about the usefulness and actual applications of the products. It’s been awesome to see his growth.

For something like Salmon, ensuring that it goes through a sufficient freeze to kill parasites is important if you plan to eat it raw. ALL Tuna is frozen shortly after being caught, because that's the best way to transport it to shore, so tuna is safe to eat raw by default.

One thing I think need mentioning in regards to the tuna is the cut off the fish your getting, tuna like beef has different cuts of meat depending on which part of the fish it comes from. It's a bit like comparing a sirloin to a ribeye stake. Each cut has a different flavour, texture and price point. I think we often fall into the trap of thinking of fish as just one piece of meat, be it Tuna or Sardine. When was the last time you went to a restaurant and just ordered a beef stake without knowing the cut.

I don't know that I would use balsamic vinegar interchangeably with red wine vinegar. Fairer comparison might have been supermarket balsamic vs the forum balsamic. (I know the bottle said cabernet, but it also said balsamic twice.)

One of the best things I’ve ever eaten: gluten free, vegan gnocchi made by a chef in the mountains/desert of New Mexico at an incredible restaurant! I happened upon the place on holiday and was sad to leave because I knew the chef wasn’t returning with me. It was like a mirage. Tears of joy mixed with tears of sadness that I couldn’t have it again unless I made the trip. Guess where I’m going on vacation this winter.

Spinach is one of those things that you can grow quite well in winter in a cheap hydroponic system with an LED grow light (or DIY a system). Even outside in a protected space if it doesn't get too cold where you live. It's something to do if growing plants give you some fulfilment.

Yes. I am an incompetent gardener and I grew spinach in a pot in my balcony. I stay in a tropical country so it is easier to grow them

I use a kratky set up under LED lights almost year round for spinach and a few other greens. I grow out bigger than microgreens but not quite full grown. Absolutely worth doing. And my husband did the nerdy math. The cost of my LED lights and set up on timers costs about $3 to $3.50 a month. We harvest more than it's worth each month in the winter to make it cost-effective. And with lettuces, you can harvest just a few leaves here and there all week and have fresh greens on your sandwiches.

@@Emeraldwitch30 yeah, I will generally grow in my living room. So the grow lights are also lighting my living room. I do love that kind of light in the dark months. Whether it's the lights themselves or them reflected on beautiful green leaves, I don't know.

really intrigued with the red wine vinegar comparison. I've been making my own from ancient, undrinkable bottles of wine, or corked bottles, and have three 5L jugs of different ones, different wines for each, and one of them spiced up with herbs, thyme, sage, pink peppercorns and mint. I've not bought any in ages, but I might have to to compare. It's been a lovely pastime to make them(well, mostly being patient), and a joy to use. Without having a premium bottle to compare it to, I'm still confident it's one of the best and easiest things to make yourself, and depending on how much wine you drink in your household, it's more or less no extra cost. Tiny bit of leftover wine, chuck it in if you're not cooking with it. Or again, corked bottle, old bottles with nackered corks that are already well sour etc. I can only recommend it, and maybe you guys can do an episode on this one day! Cheap supermarket wine vs fancy corked bottle vs fancy bottle in perfect condition. Would love to hear Kush's input on how he'd go about this and what the opinion is on "spiced" red wine vinegar

I’d love a compilation video of funny moments. Like this one when they try the vinegar (there’s another one but can’t recall the episode currently) Oh, and when Barry freaks out with the black chicken mystery box and runs away “Get it away! Get it away!”, when starry eyed Jamie asks what is in the fruit roll up (a pickle) - he seemed so sweet and child like in that moment, like a child discovering something and trying to process it. But one of my all time favorites is when Ben sees that meat rabbit loaf that Kush made for the Easter episode! It was so genuine and cute!

I'll start by saying I love your content ! I am also super intrigued by that gnocchi recipe, it sounds absolutely lovely. However, this one I feel has been rushed a bit. As a chef, my job is always to weigh out different qualities and price points of ingredients to see what is worth to buy and, even more importantly, where they fit best in a dish or preparation. So say I want to compare spinach, I would either do a puree, a soup, creamed spinach, an oil, water of spinach, sauteed spinach, or a plain salad (usually a few of those at least) and certainly not hide it under a mountain of parmesan which is super overpowering. With exceptions, the higher quality you go for ingredients, the purer you want them to be in your dish. If i'm showcasing a super high quality olive oil, I'm not going to cook with it, and I won't use a cheap one to drizzle on top of, say, hummus. So even if you had two red wine vinegars there (not a red wine vinegar and a balsamic vinegar, which are different preparations), they would serve different purposes. I'd do more than 2 price points too ! Cheap medium and high end would define differences better. A fourth could be the 'frozen' quality. I don't think the comparison were fair, aside from the gnocchi dish. Keep up the great work !

The spinach one was so surprising to me!! The average everyday spinach we get at the local green grocer here in Chile is big leaf spinach and I’ve found myself missing the sweet mildness of baby spinach!

I've been in love with latke since I was in my 20s, and a lovely Jewish family invited me for Hanukkah. The grandmother actually invited me to come to the kitchen to learn to make them. I've since made them all year round and actually deviated from just potatoes in summer. Not sure if you like zucchini or yellow summer squash but if you take a small one of each and a medium potato and shred them all together with a bit of shredded onion. Squeeze out the extra waters/starches and then add the egg/flour/salt and pepper and a touch of baking powder. It's a summer explosion of yum lol. My husband likes applesauce with his, but I kinda like a little horseradish sour cream with mine. Sorry middle of the night hungry ramblings 😅❤

One thing which *sometimes* differentiates sashimi-grade and non- is the method of dispatching the fish. There is a method called 'ike jime' which severs the spinal cord and prevents the fish from spasming after death. This preserves the quality of the meat.
