INGREDIENTS:
- Skinless Pork Belly
- Heath Riles BBQ Honey Chipotle Rub
FOR GLAZE:
- 2 cups Heath Riles BBQ Sweet BBQ Sauce
- 1/2 stick of butter
- 3 tablespoons of Bourbon (We used Blue Note Bourbon)
- 1/2 cup of light brown sugar
DIRECTIONS:
1. Fire up Traeger Pellet Grill (or any pellet grill) to 275º, we used cherry pellets for this cook.
2. Cut pork belly into cubes.
3. Season pork belly cubes with Heath Riles BBQ Honey Chipotle BBQ Rub until well coated.
4. Place seasoned pork belly cubes on wire baking racks and place on grill.
5. Cook at 275º for 2.5-3 hours or until cubes hit 200º or are probe tender.
6. Mix glaze ingredients (see above) and melt over medium heat until butter and brown sugar are melted.
7. Once your seasoned cubes are probe tender, pull from the grill. Use your glaze (ingredients above) to coat pork belly cubes.
8. Once coated with glaze, return to the grill for 30 minutes.
9. ENJOY!

First time attempting pork belly burnt ends i used this video. Used some Brown Sugar Bourbon and a little bit of maple syrup in your glaze recipe. I brought em to the family Christmas Eve dinner and they all could not believe it was my first time doing it! Amazing video Heath!

Forgot to add this comment...Grilling and whiskey are two of my true loves!! I have been a BGE cooker for 12-15 years and got a Traeger pellet recently for “simple” grilling when i get lazy. Question...I don’t seem to get much smoke flavor compared to the Egg and very small differences in flavor with all the different pellets...cherry, apple, oak, signature, i have tried them all!! Am i missing something on the pellet grill? Cooks like a champ but doesn’t seem to have the smoke flavor compared to the Big Green Egg. Any comment welcomed!!

I've always wanted to do a pork belly my ex co worker would do some and they were great. Just got me a ironwood885 about a month ago. So far I've done 2 brisket, steak skirt and some wings all came out great. So this weekend I'm doing a pork belly burnt ends and settled on your recipe hands down looks the best can't wait to eat these.

I’ve done these a long time ago following Mr Reed recipe and they were darn tasty, if I do say so. My family isn’t a fan of spicy food especially my wife, would you recommend using your sweet rub or honey rub in place of your sweet chipotle rub.

Never understood pre oiling meat. That fat will create a barrier stopping the salt penetrating the meat. Its not needed for making the rub adear. Won plenty of trophies without using any oil
