Every pro has their special secret seasonings and that’s fine. But this video teaches the fine basics and how you explained it .. Thank you . I’m a sauce guy. Sriracha mayo on the top and bottom of the bun. About the sixth time I’ve made this. Used a frozen burger from Costco and non-brioche bun (unfortunately). Melt in your mouth delicious still!! Amazing, thank you.

I like baby and spares. The spares are a little tougher (but not tough). Also they have a more strong taste. I enjoy both. I buy whatever is on sale when I am shopping and enjoy my ribs done my way.

This might be a really weird question but, is there no worry about animals attacking that thing while it's cooking overnight? I live in Toronto, Canada, and I get racoons in my backyard 2 times the size of that brisket. There could be 6-10 of them at a time WITHOUT the glorious smell of a brisket being smoked. Could they lift the lid or knock the whole thing over?
