Cola-Braised Pork Butt for Barbecue Sandwiches
Ingredients:
Pork butt (approximately 6 lbs)
Handful of parsley
1.5 onions
2.5 stocks of celery
Garlic (several cloves)
Salt (about 1 tablespoon)
1/2 cup sorghum or molasses
Cola (your favorite, about a splash)
Toasted butter buns (for serving)
Barbecue Sauce:
Ingredients:
1 cup ketchup
1/4 cup molasses
2 tablespoons apple cider vinegar
1 teaspoon liquid smoke
1 tablespoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon red pepper
1/2 teaspoon cayenne pepper
1 teaspoon salt
1/4 cup grated onion
Cooking liquid from braised pork (about 1 cup)
Instructions:
Season the pork butt with parsley, onions, celery, garlic, and salt. Allow it to sit for a couple of hours.
Add sorghum or molasses, and a splash of cola to the seasoned pork butt in the slow cooker. Cook on low for about 8 hours.
Prepare the barbecue sauce by combining ketchup, molasses, apple cider vinegar, liquid smoke, garlic powder, black pepper, red pepper, cayenne pepper, salt, and grated onion in a skillet or saucepan. Simmer until it thickens.
Toast butter buns and set aside.
Pull apart the braised pork, reserving some of the cooking liquid.
Warm the pulled pork in a skillet with a cup or so of the cooking liquid.
Serve the warm pulled pork on toasted butter buns with a generous drizzle of the cola barbecue sauce.
