The black beans Ingredients (for 4p):
• 1 KG of black beans (left in water for 24hrs) 3 tbs cooking oil
• 10 garlic cloves (minced)
• 3 medium size onions (chopped) 3 medium size bay leaves
• 1 tbs salt
How to prepare:
1. Put the beans, the bay leaves and salt in a pressure cooker. Put enough water in the pressure cooker to cover the beans.
2. Cook in high heat until the pressure pot starts to make noise. Lower the fire to minimum and wait until the pressure pot makes noise again and switch off. It should take about 30 mins. Once the pressure is off open the pot and check if the beans are cooked.
3. Heat the oil in another pot. Once warm, add the chopped onions and the minced garlic. Cook till the onions and garlic are a caramel color.
4. Start adding the beans a spoonful at a time and press the beans to make sure the sauce becomes thicker. Continue the process until you have added all the beans to the pot with onion and garlic.
5. Make sure the fire is low and let it cook for 10 minutes or till it starts to boil.  NB: It is not a bean puree. The sauce shouldn't be too thick. It should be a creamy soup sort of consistency.
The rice Ingredients (for 4p):
• 2 cups of rice (Basmati/long grain)
• 3 garlic cloves minced
• 1 small onion chopped
• 2 tbsp cooking ooil
• 1 tsp salt
• 4 cups hot water
How to prepare:
1. Wash the rice and put aside to drain the water.
2. Meanwhile take a pot and in a medium fire add the oil to the pot.
3. Once the oil is hot add the garlic and onion and cook until they are caramelized.
4. Add the rice to the pot and mix well, frying the rice together with the garlic and onions for about 15 minutes.
5. Add the salt.
6. Put the fire lower and add the water slowly, repeating the process until all the water has been added. Make sure all the rice is submereged in the water. Keep the fire low, close the pot with a lid and let it cook for 10 minutes or until all the water has evaporated.
NB: It's important to not mix the rice once you have closed the pot with the lid* Check the rice on top to see if they are cooked, if in case the rice on top is not cooked and there is no more water left in the pot feel free to add more in small quantities.
The roasted rosemary chicken
Ingredients (for 4p):
• 1 Whole chicken **Best to marinate 1 day before Marinade:
• 1 bunch of rosemary
• 1 garlic head peeled
• 4 tbsp of olive oil
• Rasps of 3 lemons
• Juice of 3 lemons
• Salt
• Pepper
• ** Feel free to add coconut milk if preferred
How to prepare:
1. Turn on the oven to 220 degrees Celsius.
2. Add the lemon rasps, lemon juice, garlic, rosemary, olive oil, salt and pepper in a processor and blend it all together.
3. You can either cook the chicken in a pan, or in the oven. When choosing the oven: Put the chicken on a roasting tray. Rub the rosemary marinating on the inside, outside and in between the skin and breast flesh of the chicken. If using an electric oven make sure you have top and bottom on. Put the tray in the oven and let cook till caramelized. Poke the chicken breast to see if any juice comes out. If the juice coming out of the breast is little and clear the chicken is ready. It should take around 35-45 minutes depending on the size of the chicken and oven. If using a gas oven you might need to turn the chicken bottom up half way through to make sure both sides are cooked equally.
