Khichuri recipe
Ingredients (for 4p):
• 4 tbsp ghee
• Ginger paste
• Garlic paste
• 300g Frozen vegetable mix
• 30g red lentils
• 90g basmati rice
• 1 cinnamon stick
• -3 cardamom pods
• 1 bay leaf
• 1 tsp turmeric powder
• Salt as required
• Freshly ground black pepper
How to prepare:
1. Wash and then soak the rice and lentils together.
2. Add 2 tbsp Ghee to a pan and add the frozen vegetables to it. Then add some salt and the turmeric to the vegetables. Stir until they slightly soften and become yellow in colour.
3. Remove the vegetables from the pan and transfer to another bowl.
4. In the same pan, add another 2 tbsp ghee along with the bay leaf, cardamom pods, cinnamon stick and freshly ground black pepper. Stir the spices in medium heat until they become fragrant (should take about a minute).
5. Add the washed and soaked rice and lentils to the pan and stir vigorously until they become mostly dry.
6. Afterwards, add 250ml of water to the rice, add some salt and increase the heat to high for the first 3 minutes.
7. After 3 minutes, reduce the heat to medium once the water starts to evaporate. Once the water has significantly reduced, put the previously cooked vegetables back in the pan along with some chillies and cherry tomatoes (optional!)
8. Mix the vegetables well with the rice and reduce the heat to low for the final 5 minutes (or until all the water has evaporated)
9. Optional step - Garnish with some fresh coriander and ghee before serving.
Bangladeshi omelette
Ingredients:
• 2 eggs
• Half an onion
• Salt
• Paprika powder
• Freshly ground black pepper
• 1 tbsp olive oil
How to prepare:
1. Slice half an onion in thin slices.
2. Crack the eggs in a bowl and add the onions to it. Add the salt, paprika powder and freshly ground black pepper to taste. Mix everything together with a fork.
3. Add some olive oil to a pan and after 30 seconds, add the egg mixture to it.
4. Let it cook for 2-3 minutes on medium heat and it should be ready to serve!
