Dry Irish Stout is a fantastic examplar of old-world Stouts but where did the Stout come from, and what makes it different to other Stouts?
Find out about the history of the Dry Irish Stout as well as how to brew your own version, and what it ends up tasting like!
Iʹm tackling the D&D Elder Root Stout in this series of brewing D&D beers. With this style I decided to try and make a Dry Irish Stout, the drink made famous by Arthur Guinness and drunk all over the world!

Recipe for 14L (3 Gallons) - 60 Minute Boil ~ 4.7% ABV:
* 2kg Maris Otter (66.5%)
* 670g Flaked Barley (22.3%)
* 270g Roasted Barley (9%)
* 70g Acidulated Malt (2.3%)
* 34.1g East Kent Goldings (30.8 IBU) @ 60
* Teaspoon of Yeast Nutrient @ 15
* Half a Protafloc @ 5
* OYL-005 Irish Ale Yeast
* Mash @ 66C (149F) for 60 minutes
* Boil for 60 minutes.
* Ferment @ 20C for 7 days
OG: 1.042
FG: 1.007
ABV: 4.7%
IBU: 31

The imitation nitro works a treat. I do this with Home brew neipa for an added dimension. Worth a shot!

This is the second time I've watched one of your videos and said "well, thats what I'm brewing next!". I made a table beer based on your recipe last week. Now I have to go to my homebrew shop again, darn ;)

@@NikitaVorontsov It's tasty so far, the flavour is just about perfect (I used Willamette) but I think I could have used a bit more wheat malt - its also a little thin. I'm hoping some higher carbonation when I keg it will help give a bit more mouthfeel. I'm planning to keg it (hopefully) this weekend, I'll comment an update when I do and sample it

Looks and sounds absolutely delicious! I tried the syringe hack and it works... for a minute or so, but definitely changes the taste-perception as if I am drinking nitro. Excellent content as usual! Thank you!

@@NikitaVorontsov Dry stouts were brewed by English brewers until the mid 20th century and the Guinness Park Royal brewery until 2005/2006. Porterhouse XXXX is a lovely example of a traditional example like the O’ Hara’s stout in non nitro for both.

Found your channel recently, and binged through a few videos. Great content 👍 I'm not a D&D player, but love the concept of going through your versions of fantasy inspired beers. The best all grain beer I've made to date has been a classic dry Irish stout, however I didn't use any acid malt. Did you find it was a worthwhile addition?

That’s fantastic, thanks so much! Aye fantasy inspired has been a really nice challenge and an opportunity to brew up some of the odder styles! Honestly I’d say it was worth it, I’ve heard that Guinness uses a part sour mash that has had time to gain some acidity from the bacteria so the acidulated malt definitely replicated that somewhat!

@@NikitaVorontsov Yeah, I've heard the same. Replicating it exactly is a challenge all of its own though. I'll be rebrewing it at some point this year, so I'll chuck in some acid malt and see how it comes out 👍

What happened to your RIMS system, didn’t it work out?

Funnily enough I do actually use it for my regular sized batch beers, the issue lies with the amount of water I use and the pump strength with smaller batches. It ends up compacting the grain quite firmly with the vacuum given the amount of water that pumps all the way through and causes slight blockages. Larger batches work fine though!
