This is the Shadowdark Ale from Dungeons & Dragons brewed in the Dunkelweizen style.
As a Hefeweizen fan I didn't know what to expect but this indeed came out fantastic.
All the fun parts of the Yeast Expression of the Hefeweizen with lovely bready dark notes!

Recipe for 14L (3 Gallons) - 60 Minute Boil ~ 5% ABV:
* 1.9kg Wheat Malt (50%)
* 1.5kg Munich II (39.5%)
* 300g Caramunich III (7.9%)
* 100g Carafa Special II (2.6%)
* 20g Hallertauer Mittelfrueh (12.2 IBU) @ 60
* WLP300 Hefeweizen Ale Yeast
* Mash @ 65C (148F) for 60mins
* Boil for 60 minutes.
* Ferment @ 20C for 14 days
OG: 1.050
FG: 1.012
ABV: 5.0%
IBU: 12

Dunkelweizen is one of my favorites! I love the chocolately banana bread flavors you get with these.

Munich classic from lallemand gives my hefeweizens a nice banana and clove flavour when fermented warm (22-24c in my apartment) although ive found it flocculates more than I’d like for the style. My most recent one is almost clear even with a 50:50 barley/wheat split in the grist

Thats interesting about the clarity, i've definitely had instances like this where Hefe yeast has flocculated completely clearly!

Another great video! I love Dunkelweizens and if you should make it to the German region of Lower Franconia make sure you try the Faust Dunkelweizen. That's my favorite, the best piece of liquid banana bread I ever had! I haven't managed to make a decent one myself though. Either the yeast was weird and I made bottle bombs or the malt was manky. I'll hopefully give it another shot soon and try open fermentation with it.

Thank you very much, i do really want to do a trip around Germany to sample amazing beers from source, just never had time to plan out a map yet Open fermentation I’ve heard good things about with Dunkelweizens, best of luck with it

I’ve really been enjoying this series. And now, you hit right at one of my favorite styles. Definitely gonna give this recipe a try. I’ve brewed a dunkelweizen using a percentage of chocolate wheat in the past to really boost the cocoa flavor. Have you ever used this? Anyway, I’m going to brew this for sure!

Haven't had a dunkelweizen in a while and this video has me thirsty for one now! Did you play around with the yeast to influence its expression at all? If I remember correctly, colder pitch leads to more clove, underpitch/warm temps leads to banana.

I didn’t actually! I wanted to play about with it more but we went through a real big warm patch as it was fermenting and so temp definitely went warmer!

How do you do that transfer to the keg with the disconnects? I'm assuming it wasn't a pressurised transfer as that's a flat bottom Fermzilla. Could I just give it a little bit of pressure in the fermenter and then connect up to the keg and open the PRV? I have an all rounder but I don't see any need to ferment a dunkelweisen under pressure.

That is spot on, I can't pressurise it too much because it isn't rated, so I just use a tiny bit of pressure to start the transfer, and then gravity does the work from there

@@NikitaVorontsov once it's started do you need to open the other fermenter connection to prevent a vacuum which would stop the flow?

Yeah absolutely, I take the airlock out of the fermenter to let air go through, and open the Pressure Release Valve on the Keg

If I ever get up the money I might try to commission you to make your version of a few brews from a book I'm writing with my wife. every book she and I write has a unique beer in it somewhere. Also, Good video.

@@NikitaVorontsov primarily we write fantasy fiction though a few of our still in progress stories are space opera. most of our stories share an interconnected set of characters because they share the same universe and are all part of the same story, but each is their own separate narrative. One of our newest ones we've started will have 19 new brews.
