My man was fighting with that paper and I felt that in my soul! Every single time I smoke a brisket I struggle to wrap it in that paper. 😂🤣

After wrapping save your wood, use charcoal. your not adding that much more smoke through paper to make it worth the cost. Add more water to your pan your letting it run dry.

Great video! I have a very similar setup and I'm currently cooking up a 10 lb. brisket now(so I thought I'd see some ideas and came across yours). I've done about a dozen or so over the past few years and the only thing I would add to your recipe is getting a spray bottle with 1/2 cup apple juice & 1/2 apple cider vinegar in a sprayer and about every hour or so, pop the lid open quickly and soak the meat generously to keep it nice and moist. I also spray it down right before I wrap it and rest it on the last leg of the cooking process. Anyways, thanks for the video and good luck with the next one!!

I have this smoker, I have four large briskets in my freezer. I must get some of those pins to hold the smoker, and temp measures. I haven’t used my smoker yet, but did season it .

Well you made me feel good for my first brisket. I did a 9 lb brisket in about 7 and a half hours (with a 2 and a half hour rest). Almost identical to your timing. I also was running hot at the beginning (280) and then, once wrapped (in foil for me) stayed at a pretty steady 260. I went from 160 to 200 in about 2 and a half hours (wrapped in aluminum foil). I thought it was a little quick and I would say the flat was slightly dry and looked similar to yours (but not bad by any stretch!). Next time I cook I really want to shoot for lower temperatures and a longer cook.

Looks like one I tried. Mine was flat only. Used my offset. Did everything I thought was right. Looked good, but was too smoky for my taste. We ate it, was ok good. Leftovers next day out of fridge were way too smoky. I had watched every brisket video and fire management vid out there and still missed it somehow. Even made me change out the exhaust pipe on my offset from 3 in to 6 in. Your comments at the end were dead on. Keep trying different smokers, Times, and temps until you get it right. That is where I am with brisket. Not hiding the facts, just being honest. We'll zero in on it until we have it right. Great video. Thanks Brian

June 9th was my Birthday. I bought a brand new Oklahoma Joe Highland smoker. The only mods that i did was installing the smoke defuser, sealed the firebox in both places, put the fire proof tape on the frame of the cook chamber door and drilled a small hole for my temp probe on the side. Also bought a oklahoma joe fire box to keep the floor clean. Also lined the firebox and the cook chamber with foil. clean ups made easier. In a few days i will smoke a brisket flat first, then a family package of spare ribs

Great job bro ! Im watching while im smoking a brisket in my oj ,I usually put a little wine and large slices of onion and garlic cloves in my water pan and ill bring it up to a boil pour it in the pan, it gives it a little jump start and adds a little flavor Great job ! just subscribed

I use a torch I got from home depot and a wire brush. if u do it that way u won't have to worry about having to re season it as much also I spray vegetable oil on the whole smoker about once a month so it doesn't rust I also keep it covered. i was trying to send u a pic of beef ribs I did two-week ago

Wow that brisket looks absolutely amazing. Been thinking about attempting one soon, but it seems a little daunting. You think it will be easy on my kettle with the slow n sear? Is there a reason you used your offset smoker for this cook?
