I just made your last recipe this weekend. I left cheffing about a year ago as I am unhappy with the industry, I lost a lot of passion for cooking but since discovering your channel I have been inspired to get back into the kitchen at home and I have been loving cooking at my own pace. Much respect to you chef Bruno and thank you for re ingniting a lost passion.

Bruno comes across as the embodiment of refined French elegance and is simply in a class of his own which is hard to ignore. There is no other youtube channel that has motivated me to start cooking and upgrade my kitchen appliances so quickly like Bruno has, considering how bad I used to be at cooking. Thank you Bruno, for making me appreciate cooking so much more.

It is impressive, the results are always incredible and perfect, but what really fascinates me is the refined technique that Bruno prints to his art in confectionery. This croissant is perfect and makes your mouth water. I can only applaud effusively, clap, clap, clap !!!

This is great! I just tried my hand at croissants a couple of weeks ago. I followed your recipe, but I screwed up a few places. Ended up with some rather flat croissants. Tasted the part, but just looked sad. You mentioned the butter marbling and that's exactly what happened with mine. I could see the butter under the dough in pieces. But, I was so far in, I pushed onward. Again, they were fine for failures and tasty failures at that. Aiming to try again this week, so this video is perfect timing for me. Merci, Bruno!

I tried so many recipes out there and this is the one that got me crying of happiness. I followed everything mentioned in the video, watched the video multiple times, and just yesterday I managed to get beautiful flakey on the outside and soft inside croissants! Thank you Chef Bruno!

I made them on Monday and they are just fantastic. I have some experience of working with dough but the guidance is so good I am sure, everyone can make it. It is worth it! A little "trouble" I had was when I was rolling out the dough for final folds, the butter inside was slightly colder than needed and it became a bit marbled while I was rolling the dough out but the final layers still turned out fantastic. I baked 4 croissants the next morning (they spent the night in the fridge) and froze the rest.

Hi, do you happen to have written instructions for the steps you follow? I think I'm missing some of the steps from the video - especially when the audio is not in sync with the video. The instructions in this video are quite different from the shorter video so I think I'm getting a little confused. Thank you!

Lol. On my sixth try I finally made the perfect cheesecake of Chef Jean-Pierre's. Regarding this croissant recipe I'm having issues converting 500 grams bread flour to cups. One conversion tells me 500g = 4 US cups, another conversion tells me 500g = 3.68 US cups. Which is it? I'm attempting to make it now using homemade butter I made following another Chef Jean-Pierre recipe and unsure if I should have salted my butter. Would it matter?

Mr. Albouze, thank you so much for sharing your knowledge and tips with us! I made these croissants and they were amazing!!! Better than 95% of croissants I had in the US. This was my FIRST time making real puff pastry. I used Kerrygold butter, followed your directions and was awarded with a perfect, buttery, flaky croissant for breakfast... With jam and freshly squeezed orange juice. For 10 minutes I was transported somewhere on the Mediterranean coast. And you made it possible! Merci beaucoup!!!
