I also watched many, many canning videos, most of which explained some but not all steps and some that gave incorrect information. In all my life of canning I never canned sweet potatoes after watching you I went to the store bought a bag came home and canned them the little bag made 4 pints they are beautiful I am going to be looking at farmers markets or trade day so I can buy several pounds thank you Libby for sharing

Wow! This is exactly what I wanted to see....those sweet potato fries being canned. Excellent. Video very well done. Sometimes I'm in a big hurry and just want a short video. But once in a great while I like a video where a real quick cooking recipe is shown with the fruit or vegetable also. Just an added bonus. Thanks for your time and effort, ma'am. Jesus bless.

I just need to do a trial run with no jars in the pressure canner and find my sweet spot for the ten pond pressure. Then I can do the filled jars without worrying about ruining food. Thanks for the lesson Miz Lippy.

Yum!! I need to share my sweet potato praline recipe with you! I make it every Thanksgiving. I'm like you, I don't like them overly sweet either.

I don’t like sweet potatoes so I peeled cut mine up and put them in a dehydrator and turned them in the sweet potato powder and I have been using that and sprinkling it in my soups my meatloaves or whatever so that way I will get the benefit of the nutrition from the sweet potato even though I don’t like them but I use that powder every day

Did you raw pack your potatoes. I see you mention Ball book instructions, but didn't see you cook them before filling jars.

As a newbie to pressure canning, I got myself an electric one to get over my fear of the stove top one. But, your video is so detailed and you explained things so well I feel confident. Maybe next year I can buy a stove top PC. I love your french fry cuts, are those potatoes not too soft to put in the oven to do the fries?
