Daddy Jack's "Cooking with the Blues" Recipe - Chaplin's Famous Stuffed Chicken Breast. Daddy Jack cooks a dish he hasn't made in many moons. This colorful and delicious stuffed chicken breast was one of the most popular dishes made at the original Chaplin's restaurant in Dallas, TX.
INGREDIENTS:
Goat cheese, spinach, sun-dried tomatoes, roasted garlic, olive oil, chicken breast, tarragon, salt and pepper, butter, blackened seasoning, flour, white wine, lemon juice.

How do you know he's a REAL chef? He's not afraid to get his hands all up in the food, not afraid to cook with really high heat, doesn't use pans with insulated handles, uses a rag as an oven mitt - I swear I kept watching for it to catch fire. Nope! Chefs are usually good, but New Orleans chefs are gifted. People in that part of the country just KNOW how to cook!

Hey jack, did this one for Thanksgiving this year. Done it a few times now and refining my technique. Can see why this was your best seller. outrageously fun to make and more fun to eat. Browning, slowing cook with a lid, oven time - timing makes all the difference in all the phases, not just the ingredients. Thoroughly enjoyed as always, as did my guests. Huge hit. What you do on this channel makes a big difference for many. Bravo as always. Happy thanksgiving

@@CookingWithTheBlues Yes, been using skinless and carefully cutting a nice deep pocket to keep the stuffing in place. But certainly see how the skin version enhances the dish. Devil is in the details. Thanks for the reminder.

Y dont U eat ur food anymore... I've been watching you for maybe five years and you always used to eat it after you made it and that was the second best part aside from watching you cook food that you loved and I was just wondering how come you don't try it anymore I mean I know you do probably after the camera goes off but I like to see people eat the food the best joy in my mind of a cook or Chef either way is a plate that has been almost licked clean because the customer or guest like loved it that much

Great to see you back. MY only 'food' channel. I love how you are down to earth and it all just makes sense. Is there another cheese besides goat cheese that can be used in this recipe. I have an allergy to goat cheese.

Cut the top off of a full head of garlic smother it in olive oil wrap tightly in a little bit of aluminum foil, 350 for 40 to 45minutes.

Curiosity question...after watching a few videos where you “use butter to thicken the sauce,” can you replace the butter with ghee. I understand ghee to be preferred in a rue, curious what the effect would be in a sauce like prepared here.
