im think for most people msg is no problem. for me it certainley isnt. and it is accouring naturaly in a lot of food like tomatoes, parmesan cheese, mushrooms and others...

I get fairly excited eating broccoli. That and Brussels sprouts are probably my favorite vegetables. Green beans are also great if you roast 'em up in butter!

Yes! I've always thought broccoli was just OK. That was when I would only stir fry, steam or eat it raw. Once I started roasting it in the oven... game changer. That little bit of brown crunchiness makes all the difference.

not only cornstarch alone, but using the velvet tecnique, mixing corn/potato starch with egg-white and soy sauce. then put into boiled water for around a minute, then washed and cooled, finally to be stir-fried on high heat.

Marinade the beef in baking soda, soy sauce, corn flower (and a teaspoon of water) and any other asian sauces and/or flavours you wish to add. Leave it in the fridge for an hour and Bob's your uncle. The taste, texture and tenderness of the beef is spot on to Chinese restaurants.

okay Chef John I prepared this dish exactly as you explained and The Taste was very good however the skirt steak was extremely tough even with thin slicing. I would highly recommend to marinate this skirt steak before cooking

Another Veg that tastes amazing charred is Carrot(s). Cut into chips (preferably waffle style) and kept under broiler to be charred thoroughly and salted. Tastes amazing. P.S. Nooooooooo idea about Nutritional value.

I'm in California and skirt steak has become expensive over the last 15-20 years. It used to be dirt cheap but then word got out about how good it is and now we pay through the nose for it.

Chef John....I wonder if you've heard of adding bi-carb soda to the meat marinade? It seems to do something to the proteins in the meat and make it super tender even when it's crispy on the outside. I'm sure there's a more scientific reason for it happening,,, all I know is, it works. Edit: the bi-carb makes it just like your ole faithful Chinese take out.
