It wasn't until I left for college that I realized most people eat baked cornbread. I had never heard of it being cake-like and thought that all cornbread was fried in a cast iron skillet and flat with lacey edges. Mama drained them on brown paper grocery bags next to the fried pork chops. Oh my!

My mother drained all fried things on well crumbled up paper bags since paper towels pool the oil, while the nooks and crannies of wrinked up paper lifted it up to drain and crisp.

YUMMMMY !!! My Mamma used to make this kind of cornbread for us when she was alive. Using SR Cornmeal, she would mix it like you did and scoop it out using a LARGE mixing tablespoon. She would place it into the frying fat, and, we liked it to be a heavy golden brown. Another fried cornbread she made was what we always called "Waterbread." It was made using ALL PURPOSE Cornbread Mix and water. The batter was thinner than that above, and, she would fry it til the edges were crispy and brown. We would eat that mostly with her homemade vegetable soup. She also made the EELBECK hushpuppies, dropping them in tablespoon sized dollops like the first I mentioned above. The second "Waterbread" cooked up to be flat and had those crunchy edges all around that wouldn't form if you had too little grease to fry them in. TYSM cause NOW I'm wanting to make myself some of the cornbread you showed in your video - and some crispy "Waterbread, too.!" YUMMM !!! 😋👍😍😻

Have you ever heard of the South American cornbread patties called "arepas"? This is very similar.

My mother only used water, yellow cornmeal and salt. I’m sure yours is delicious also. I have also made it with a spicy meat mixture in the center and fried them. Yummy!!

7:12 I recommend two spatula method for when making certain stuff on electric griddle is cannot use tongs. Food can easily slip off the edge. I remember my boyfriend once upon a time using two spatulas to scramble eggs when he used to volunteer somewhere. It was so absolutely dynamite!

I’m a lover of Jiffy but lately it’s just too sweet. I’m going to try your recipe. I have tried other methods and didn’t like them. My dad (RIH) he only ever made his in a small cast iron pan. He filled the oiled pan with his rather loose batter and it had to be black on the bottom to be done. Bless his heart. He was always offended when we didn’t want to eat his cornbread with him.❤

These look sooo good. They look like what a friends mother used to make and of course when I was young I wasn’t studying how to learn how to make ‘em but now that I’m older I wish I had payed attention. I will definitely try your beautiful recipe!!! I’m in NC too in SE area.

You brought back some good memories. My mississippian mother always made these. She feed them to me with a cold glass of buttermilk or with greens, or beans. I myself haven't made them in years! I think they'll be incorporated back into my weekly meal rotation. Thank you for reminding me!

I made this today & it was delicious!! We had sour crout & 🥬 fried w/ summer sausage & hot water corn bread. I learned somethings. #1. Hot water boiling #2. Let batter set 5-10 minutes & it really does work out better. #3. Skillet 🔥 hot

My mother made these & so do I! 😁 We primarily ate ours with some finely chopped onion in the recipe for savory meals. Of course they ate also great as you have done Pam. Thanks for sharing.
