Mark have developed a sophisticated taste bud. Carp’s guts among other fish are eaten in some Asian, maybe the carp in Japan taste better than the one in American. However American people who are spoil haven’t developed a taste for fish guts, it’s more of acquire taste.

Carp raised or fished in clean waters is very meaty and delicious. Only issue is the bones, but if you know how to score the meat around the belly, it's not an issue.

I visted Koinishi (鯉西) ten years ago and bought blazed carp at shop. In Nagano, carp is also eaten in Suwa area, which has Lake Suwa, hot spring and sake brewing. Next, I am expecting that you will eat local food, such as silkworm and black hornet.

Mark, carp have veins on the side of the body press up right against the skin going from the head to the tail near where the blood line usually is, if you remove the head, make incision or a cut the meat right before the tail, if you can find the vein, you can slowing pull that vein out by giving the fish a tap or a slap on the body, the vien is really fishy it’ll help improve the taste by removing it.
