Chess Pie is a southern favorite that is made with a buttery shortbread crust and filled with a rich custard filling. A simple pie that is so addictive!!
Ingredients:
Crust:
2 1/2 Tbsp butter, salted
2 Tbsp sugar
1/4 cup flour
1 Tbsp cornstarch
1/8 tsp salt
Combine all the crust ingredients and press into the bottom of a 5 x 5 inch baking dish.
Bake in a 350 degree F oven for 18 minutes or until lightly golden brown.
Pie Filling Ingredients:
1/2 cup butter
3/4 cup sugar
1/4 cup brown sugar
1 Tbsp cornmeal
pinch of salt
3 Tbsp heavy whipping cream
1/2 Tbsp vinegar
1/2 tsp vanilla
2 eggs
Powdered sugar for garnish
In a sauce pan, place the butter and melt over medium heat until the butter bubbles, foams and begins to turn golden brown. Watch it closely so it doesn't brown. Remove the heat and pour into a bowl.
Into butter add sugars, Stir to combine.
Add in cornmeal, salt, whipping cream, vinegar, vanilla and eggs. Mix well.
Pour over crust that has cooled (doesn't have to cool completely)
Return to oven for 24 minutes or until center is set and a toothpick comes out clean.
