Thank you so much for posting these old videos. I have such good memories of watching Julia Child on PBS with my mom as a kid. She’s gone now, but these videos bring her back to me. We made chestnuts based on this episode, but it was a bit of a disaster.

We cut an X into the flat side and put them on a cake cooling rack on one of the oven racks and roasted them at 350° until they "popped". Melt some butter, and peel them from the X as soon as they're cool enough to handle. Dip them in melted butter. YUM!

I have peeled, steamed chestnuts in my fridge as we speak. Love them sautéed with mushrooms, onions and fresh sprigs of thyme, salt and pepper as a side next to some honeynut squash and whatever main ingredient during the fall. So good.

I once made a cake with marrons glaces mixed with whipped cream. It was delicious but almost overwhelmingly rich.

This one area in Copenhagen has a river that’s lined with chestnut trees along the walkway. It’s actually pretty interesting going one day they’re all on the tree and the day they are all on the ground. I never noticed anyone ever taking them though.

One Christmas I got the idea into my head to try roasting chestnuts as part of our holiday dinner. I bought a bunch of them at Sprouts, but when I looked more carefully at them and try to peel one I found they were shot through with mold! That was the beginning of my disillusionment with Sprouts, which has what I think is an unearned reputation for having the freshest produce and this has played out across many types of vegetable. At the time I was too discouraged and/or busy to try again, but now I think I will.

Chestnuts are usually moldy no matter where I buy them. Its hidden under the shell, impossible to see until they are opened. I never got moldy ones 30 years ago. Maybe the way they store them after harvesting has changed.

I don't think I've ever seen canned chestnuts in the supermarket. I can only get fresh chestnuts and only near the holidays (Nov-Dec).

Nothing Julia cooked was cheap. My mother quit watching her because we couldn't afford the choice cuts and exotic bits and expensive wines she touted.

A more wholesome version, but a different nut. Ingredients: Sugar, Palm Oil, Hazelnuts (13%), Skimmed Milk Powder (8.7%), Fat-Reduced Cocoa (7.4%), Emulsifier: Lecithins (Soya), Vanillin.

@@stephenpmurphy591 please refer to the US department of Agricultural statistics. As well as the Agricultural marketing resource website. The amount of chestnuts imported to the US is amazing. As noted by Julia, the devastating chestnut blight wiped out the largest majority of chestnut trees in North America. In fact, they are still considered an endangered tree in North America. My father in law born in TN. 1928, recalled how the trees seemed to just wither and rot. A first hand account of how they lost an income resource.
