Julia had several methods for puff pastry. I have tried all of them and never had a failure. She was meticulous and relentless in her search for a recipe that could be replicated by a home cook who thoroughly read and carefully followed the instructions to the letter. A true icon.

I use the cuts of meat that heretofore were cheap…and knowledge of these cuts and how to make them sumptuously delicious is the challenge for a great chef!!

I have prepared most of her recipes since the 1970s as a teen and love Julia the very best!! She knows so much that she spurred me on to RESEARCH my ingredients and grow them and continue recipe testing…Voile

Julia was really the first of television chef's. I think if we'd been about the same age, and met we would have been great friends.

Thank goodness they came out with frozen puff pastry sheets… I’m willing to try anything but when Jamie Oliver once said “ it’s ok mates to buy frozen, I do”… I said giddy up! Let’s face it, all the ingredients we do for the insides of the PP is homemade so let’s all give ourselves a break 👩‍🍳 bless Julia’s heart ♥️

They used ton of Lard and Fat.

Sure, but croissants are 50 % butter, and they're "awfully good"

As long as the fat isn't processed (hydrogenated or hydrolyzed, as with margarine and Crisco), it's okay. We've been brainwashed to think natural fat is bad for us by the people who make fake fat, which is a killer.
