This Oaxacan mole uses a spice blend to cut down the toasting, seeding and rehydrating time of the dried chiles and the whole spices. The Manchamantel blend is made with ancho chile powder and some pasilla chile powder with added cinnamon, cocoa, Mexican oregano, cloves and nutmeg. Because avocado leaves may be difficult to find, we used bay leaves with a bit of anise.

Recipe for DIY Manchamanteles spice blend:
3 Tablespoons ground dried chile peppers (mostly pasilla and ancho, with a bit of guajillo)
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon Mexican oregano
1/4 teaspoon ground cloves
1/4 teaspoon ground black pepper
2 bay leaves (crushed)
1/4 ground anise
1/2 teaspoon nutmeg
