Tonight I made the Cilantro Lime Basmati Rice......he was in heaven! I usually have a difficult time cooking rice, so when he tasted it his face lit up and a got a thumbs up.

Hi Rachel. I can't wait to try your Mexican rice and your cilantro and lime rice recipes. Sometimes there are days when I can't find you on U-Tube and I need to say on those days I really miss you. I also view other chef's recipes that are on similar recipes and I feel I should tell you that you are the most precise and methodical chef. Many others, not all but many others seem to rush through their presentations while you take whatever time you feel you need to take to explain the details and let us know why you do things the way you proceed and that is very effective in helping me remember what to do and also what kind of substitutions I can make and still have the item I am preparing turn out great. Thank you for guiding us through the kitchen and I hope you continue with U-Tube for a long time to come. Also, I like when a recipe is repeated to view it several times because even though I try to write things down quickly, occasionally I will miss somethings because I am trying to watch you and write things down at the same time. You are absolutely awesome!!! I had a stroke a year ago and have just been able to do some cooking. I found you on you tube and LOVE you! I have made puffy tacos, flour Tortillas and a few others. I follow your instructions and watch you while I'm making the recipe. A year ago I did not think I would cook again. You have inspired me and I thank you from the bottom of my heart. Thank you Rachel, this looks amazing. I do have a tip for using your zoster though. If you flip the zested and the lime over, so the lime is under the seater, and the channel of the seater is facing up, you can use the zestier in a violin bow motion, making it so you can actually see the lime, and you will know exactly when to turn the lime, so you don't get the white pith. Also, you can see how much zest you have, so it's never a guess.

Hi, Rachel, I made this side dish for our happy hour gathering at church today. Made a side dish of black beans, fresh corn, assorted sweet peppers, onions, oregano, stewed tomatoes and homemade salsa. It went well as a meatless dish. I follow you always and watch an episode every night.

Another excellent side dish sweet amiga. I love the addition of a bay leaf as I've never added it to my cilantro lime rice but now I will. I also use this same recipe when making couscous but add red onion & a can of corn as well. And as both Johnny and I are such fans of lime, I usually squeeze in the whole lime. You've given me the perfect idea for my side dish this Sunday when I'm making stuffed bell peppers. I usually serve mashed potatoes but I think the coolness of this rice dish will be perfect for a hot evening's supper. I sure do hope y'all have a gloriously blessed weekend. We're running down to the Valley to change flowers on my parent's grave and then back home where we're safe and sound. Yesterday was the first time I tried cilantro lime rice. I'll tell you what Rachel this recipe will definitely be on my list for my meals side dish. Hi Rachel. I saw some rice someone had made & I asked what kind it was & they told me wad , Cilantro lime rice. I searched for it & saw your recipe along with many others, of course. Since I watch your videos & love how you show step by step on everything, I decided I'm going to try your recipe . Sorry to say that I do not like Cilantro at all though I'm going to have to try it with Mayne a little of it. I like rice period, so even with just the lime, bouillon, & all other flavors, I know I will love it!! Tks Rachel ❤
