Coconut and Cherry Loaf Cake

Packed with the tropical flavor of coconut, this cake is delicious served at tea-time.
Ingredients
150g butter
75g caster sugar
3 large eggs ( whites and yolks separated)
125g self-raising flour (sieved)
75g desiccated coconut
125g glace cherries roughly chopped
for the topping
melted jam (strawberry or cherry)
desiccated coconut

Is beating the egg whites necessary since the butter and egg yolks will be beaten into them? I would think that the meringue will be beaten to death at this point. I will bypass the beaten egg whites and see how the cake will come out. Thanks for sharing.
