In this video I show you how to make a really easy coconut and jam cake. This coconut and jam cake brings back memories of school dinners and can be easily made at home. Follow my recipe for a super moist vanilla sponge cake
Ingredients:
165g Butter/Stork - room temperature
200g Caster Sugar
4 Large Eggs
¼ (60ml) Vegetable Oil
200g Self Raising Flour
¾ Tsp Baking Powder
1 Tsp Vanilla Extract
4 Tbsp Full Fat Milk
Seedless Strawberry Jam - As Required
Approx. 4 Tbsp Desiccated Coconut
Tips:
To test the cake is cooked insert a toothpick into the middle, if it comes out clean it’s cooked
If the top of your cake is browning quickly you can cover it with foil
