John, I love how you pay attention to scraping the bowl. Nothing annoys me more than seeing some chefs and cooks leaving half the mixture on the spoon or in the bowl! As you quite rightly point out. I love this recipe, thank you :)

This cake was phenomenal; yet another keeper. As another viewer mentioned about scraping the bowl, these tutorials are invaluable for a beginning baker. I call it kitchen economics. John's preparation techniques are not only instructive they are also cost effective. Thanks to John's tips, I process my own Baker's sugar in a blender and Confectioners' sugar in a spice mill at great savings.

Oh yes,the best part of school days... the coconut n jam sponge with custard. This was my favourite along with the custard n jam slice. That was a thin base of pastry then the layer of jam with a set custard on top, usually with dessicated coconut sprinkled on top. Happy bellies.

I make almost the same recipe, but I cut it into 2 layers and fill it with a cream made with sweet condensed milk, coconut flakes and a little bit of butter. It 's also delicious !

I use the birds tinned custard powder, that I buy in the Uk and bring back to the US. The vanilla pudding is not the same

this one takes me back. So good! Though, as a brit living in the US, I have to tell you; vanilla pudding is NOT the same thing as custard and is only served cold. Americans do not have custard and are confused when they try it! lol

Hello John. Thank you so much for a very tasty cake recipe. I have made this twice now and no problem but I noticed that it always dries out after a day or two and becomes really hard. Any reason for that? Or is there anything that I can do to make it stay moist even after a day. The cakes I buy from the supermarkets always stag fresh and moist two day later and counting..

This was bad news for me John, I did the large version using 6 eggs, half ways throu cooking the grandchildren turned up for Roast dinner….besides filling their faces with a full roast…..they also had the largest pieces I was in. The process of cutting up,,,,with half ton hot custard…..even our 8 month old had some of the sponge and custard and wolfed it down😊😊

Hi John. Lovely looking cake but can you tell, why do you use baking powder? When I bake cake's and sponges I use the best self raising sponge flower and no baking powder and still get perfect rises on my sponges. Look forward to your next clip.

I really like British recipes but as you know, we don't use metrics. I suppose I should get a scale to get it accurate instead of measuring cups. Is there any difference in the teaspoons you use in the UK and in the USA? I was going to make a Coconut cake for Easter so maybe I'll try this one. Would this work in a 13 x 9 size pan? Here's the ingredients list and full written method on the website, large Jam and coconut cake, profoodhomemade.com/jam-and-coconut-cake-large/ Scales are essential if you want to get the best results, and if you have digital scales use the gram units, they're easy to use, more accurate, and you don't have to worry about tsp measurements at all. I don't know if USA tsp are the same as UK tsps, what I do know is you're gram in the USA is exactly the same as my gram in the UK.

I completely agree with John. Scales are a must in the kitchen. Measuring by weight and not volume ensures accuracy, and is universal. Cup sizes are open to interpretation depending on where you live. The electronic scales are really cheap, you can use metric or imperial on the same scales, and can reset to zero between ingredients. I wouldn't be without mine.

Hi John, in the recipe on your website, you say to use ‘260g / 9oz Vegetable or sunflower oil’, but how do I measure 260g of oil? Should it actually be ‘260ml’ of oil, rather than grams please? I hope you can answer. Thank you.
