Coconut milk, like other milks, has natural sugars. The exothermic reaction of the lye with the water brings the internal temperature of the mixture up to just insert under boiling if you start with room temperature liquids. Freezing a portion of your liquid helps keep it cooler. This reduces some caustic steam but with milks it helps reduce the chance of scorching those natural sugars, which if done can add unwanted odors to soap and change the color.
