Chocolate Eclairs are one of my favourite Pastries from my childhood.
Coffee Eclairs filled with fresh cream have become a firm favourite as I've got older 💕

You Will Need
85g / 3oz of Softened Butter
180ml / 3/4 cup of Water
3/4 teaspoon of Sugar
1/4 teaspoon of Salt
100g / 3.5oz of All Purpose / Plain Flour
3 Eggs
Thick Whipped Cream to fill the Eclairs
For the Icing
1 cup of Icing / Powdered Sugar
1 teaspoon of Instant Coffee
2 tablespoons of Hot Water but don't add it all at once
For chocolate icing use 1 teaspoon of Cocoa Powder instead of the coffee.
Bake @ 200C /400F for 15 minutes then turn down the oven to 180C /350F and bake for a further 20 minutes

When I was a teen my brother, wife & 2 kids moved back in with mama & me. He’d just got out of the Army. If they wanted to go out at night - I knew he didn’t have much money - I told him to just bring me an eclair. The cheapest baby sitter but I was happy. After I got married I used to make them. It’s been 35 years since I’ve made any🎈

I've only ever had eclaires with the custard in the middle. Whipped cream sounds so much nicer! As usual, a perfect demonstration!

Thanks Lisa, Custard is often the default filling in Bakeries as it can sit for many hours on the side and not spoil, good cream needs to be chilled and can spoil so they tend to stay away from it but if a baker is good, they will let you have that choice. It's just my opinion that Cream is nicer but who can tell.. :o) x

I love a good custard filled regular doughnut but youre absolutely right, custard has no place in an eclair, fresh cream all the way!

Got to try Maple. Maybe something from my region where we produce maple syrup but maple frosting from natural maple is to die for.

My favorite frosting is maple flavored. Peanut butter flavor is also very tasty.

They look absolutely delicious Steve. Mmm. Eclairs are almost calorie free before you get to the middle, & if you eat them upside down. I remember round ones with butterscotch flavour icing as a kid. Thanks for sharing, take care & Happy Weekend to you. ❤☺🐶

You gotta make cream horns, Steve! My favorite pastry! I'm currently doing a 36 hour fast. I don't know why I keep watching food videos. Anyways, I loved this video and all of your videos. Keep up the good work! I still need to make the branston pickle, never tried it before being from the USA.
