You Will Need
Pulled Pork - Shredded
Mole of Choice (I used Mole Negro)
Corn Husks
To make the Masa Dough
2 cups / 250g of Masa Flour
About a cup / 250mls of Lard and Stock
(I kept the fat from cooking the pulled pork mixed with the stock)

Banana/plantain leaves are mostly used in the Central American version of tamales.

Yes, also in Mexico, many regions use Banana leaves, it tends to vary on what is available locally, I saw families in Oaxaca using Green Plantain leaves too. Thanks

In the Huasteca region of Mexico banana leaves are used ( San Luis Potosi, Taumalipas, Veracruz).

Thanks Tania, by the way the link you left for Shaz, was not appropriate, it was to another Recipe using Pigs Lard, so I am not sure why you posted it? KZfaq blocks links in posts by default, so no worries. by the way, I don't assume because Shaz says he can't use Lard that he's vegetarian, that is why I ask so I can give useful advice. There are many reasons why he might not be able to use Lard.. Thanks

Also in Central America we add some vegetables to the tamales to make a full meal in one package and they are a little bigger.

Awright!! Steve, thank you so much for this series on Mexican cuisine! I've promised myself that I will make tamales for the first time this Christmas! Someday, I'd like to see you make sweet tamales -- The make a great dessert or a nice snack!

Like a lot of dishes with complex flavors, they do get better with age, and they freeze well. Re-heat them be re-steaming them a little or just pop them in the microwave for a minute or so.

Steve, when you make a stock, what do you do with the vegetables after the stock is finished? I am always interested in the history of a food and have had a look at tamales out of curiosity. Did you know that the Aztecs ate them? They were made with quite a variety of fillings including turkey, flamingo, frog, axolotl, pocket gopher, rabbit, fish, turkey eggs, honey, fruits, squash and beans, as well as with no filling. The pre-Columbian Mayas also ate them. It seems that every South American country as well as those in the Caribbean and Cuba has a form of tamale, some sweet and some savory. Even the Phillipines and Guam have a type of tamale, although many of the countries don't call them that. So many recipes, so little time. I just find this type of history fascinating. Hope I didn't bore you. :)

Far from bore me Ebba, I loved reading your muse, I did note that every region in Mexico had their different ways to prepare and Fill Tamales, some used the dried Maize Husk, some the Banana leaf or other leaves even, that's the beauty of Tamales and Mole for that matter, you can't really get it wrong with a dish that has so many variations of right. I suspect the Philippines and Guam have their Tamales from their Spanish influence, the Spanish were quite brutal in their conquering. The conquistadors attempted to wipe out most cultural norms and replace them with their own religious and cultural superiority? It is actually a very sad story but a glimmer of civility amongst the carnage was that whilst they raised to the ground thousands of ancient temples and used the same stones to force locals to rebuild their churches on the same grounds, that in fact the food and traditional cultures of the Indigenous people in fact flourished and spread far and wide by the sailors that carried out the conquering. If you should ever have a chance to visit Mexico City and the Museum of Anthropology I suspect you would enjoy it immensely.. Hope I did not bore you LOL :o)

I bet they were good, but I like better the ones they make in the north of mexico, when you mix in the stock to make the dough, also add a couple of ground guajillo peppers, so the end dough is slightly orange/red... and it looks like these may have been missing a bit of fat in the dough, and were missing some kneading, the texture should be very spongy. tamales are one of the few exceptions where something tastes much better when re-heated, put them on the grill or the cast iron until the husk browns/burns a bit... the best breakfast with some refried beans and a spicy tomatillo salsa

I didn't say they were only eaten at Christmas?? I was in Mexico for many months, so I do know that :o) However many Families make Tamales as a special treat at Christmas time, that's what I said, Mexicans will understand :)

Yes there are, the Phillipines Cuisine was great Influenced by the Spanish Settlers, it almost certainly comes from that encounter.

Nope... Your tamale came out flat... they should be FLUFFY, you need to knead your masa just like bread dough, and the consistency should be soft but hard enough and able to be easily spread over the husk some people add sesame seeds to the masa or Anise on sweet version... A word of caution!, if you are unsure... and still want to try, do it on a single tamale, that way if you don't like the result you'll still have your regular tamale masa. 1.- Add Baking soda to the masa so they are Fluffy for that amount 1 to 2 tbs will do 2.- To spread the masa you don't need any plastic film, just use the back of the spoon to spread it. 3.- That Masa is too dry, you can add some chicken stock or as you did pork stock. 4.- I would skip the celery on the stock 5.- Most "traditional" tamale for Central Mexico (Mexico City) the filling is made in a savory green salsa (thick) and that's the one used to spread the luv over the tamale. it is not a bad try, those are actually most often found in the Oaxaca state. flat and on plantain leafs, and oily too. Here some combination flavors you can try: Traditional flavors Mole+Chicken Pork+Green salsa Zucchini + Cheese Zucchini + Beans (Rajas) Sauteed green peppers (Hot as Jalapeños or mild as bell pepper it depends on your taste and what's available) + Corn + Cheese and for your sweet tooth Peach, Pineapple (from a can), Anise, , Hazelnut spread. You can use almost any ingredient you can use for cakes, but not all of them will work on a tamale.
