Cold smoked mozzarella sticks are easy to make and are great as is for a quick smoked snack. I smoked them on my Pit Boss 1100 Pro, but you really just need a pellet maze, and some way to :trap: the smoke.

Unfortunately I do not. I've never tried that nor have I seen any videos where other people try that. But it is a great idea. Maybe one day I'll give it a whirl and make a video out of it. Thanks for watching!

Really cool video! I’ve been thinking about doing some smoked cheese and really didn’t know the process! At the end when you put it in your saran wrap or Ziploc bag, I’m assuming that a vacuum seal device would be appropriate if you have one?

I have smoked cheese half a dozen times and have never done or heard of the parchment wrap for 24 hours. I always went straight to saran wrap. What is the benefit of the parchment. You suggest it gives it time to "mellow out". Can you expand on this? Thanks.
