Considering the main character doesn’t even talk in the scene, the director probably planned to swap out the zombie audio anyway lol.

That's what makes this sketch too funny. The other zombie doesn't realize that audio sequence would probably either be redubbed by professional VA's or like you said, swapped out with loud atmospheric noises or something, hence why the assistant didn't care which zombie performs. What I found more interesting was that whoever played the role of the survivor was actually paying attention to the directors notes every single time, and not just performing the same act over and over. For example when the director asks for a sense of urgency you can rewatch the sequence leading up to the confrontation and see how the actor seems so nonchalant/casual during what I might assume is a severe apocalypse scenario. Makes this sketch even better imo.
