If you have potatoes then look in the refrigerator and see what else you have to go in a made up casserole. You will be surprised to see how good it will be.

My husband wrote in a card to me on our 5th anniversary “you can make a feast out of some sour cream, an onion, and an old shoe.” We have been married for over twenty years now, and that card is under my mattress along with our kid’s report cards. I love to see you “throw” it together in the kitchen, Ms. Brenda. Use what ya got! No waste! ❤

YOU ARE FABULOUS!!!! I am 75 and loved watching you and listening to you (Arkansas here). My mother was a creative cook and I dabble in that on occasion. I especially like to "invent" one pan or one skillet dishes. It is difficult for me sometimes to cook for myself and/or one other because I cooked for my family for so long. Recipes?? they are great for ideas. I'm not real fond of measuring things, especially when using vanilla. I hope I find myself in my kitchen tomorrow cleaning out my fridge and remembering your suggestions. Thank you.

We grew up with surprise dishes like this one. When momma would cook for the 5 of us including her she would make things like ham hash which was more of a hash stew. Between paychecks she would somehow come up with food combinations that she would tell us about when she was a little girl and how grandma would stretch meals. Many of our foods come from what we ate growing up. We always had a big garden and a momma who worked in the mill and kept a roof over our heads, clothes on our backs, shoes on our feet and canned foods to make it through the winter months. Sometimes someone would bring her some venison for us all to eat. But we never went to bed hungry. It might not have been what we wanted to eat but it kept our stomachs from rumbling in bed at night.

Your story reminds me of my grandad. When I was a kid he used to bring me a piece of fruit every day. Each night he'd peel whatever he had with his pen knife. I loved this even though his hands were always filthy since he worked on the land. 😊

Hi Brenda, i grew up with my great grandmother living in our home. She cooked just like you. She called it mustgo. She would open the frig and say this must go and that must go and make some of the most delicious food i have ever eaten. I still cook just like that and she is watching from heaven so proud. My kids cant believe the things i come up with like that. It works well with a little piece of meat you need to stretch too. It makes my heart happy to see you cook like that too. I miss my grama alot! Thanks for sharing with us.😊

Every time you peel and cut things with that big utility knife it takes me back to watching my mom. One knife for everything. LOL I also love that you use your "imperfect" vegetables even in your videos. It's common sense to use em up. Not everything in the fridge is going to be as perfect as the videos of others choose to have us believe.

Brenda, I wanted to let you know, I saw this video, so this evening I decided to make this Potato Casserole. I didn't have sour cream, so I used dill dip that I had on hand. I added mayonnaise, egg, and mustard. Vegetables - zucchini, carrots, onions, green peppers and added garlic. I get a wonderful white cheddar from Aldi's and also added a yellow cheddar, put some black pepper on top and when almost done I will add the rest of my cheese. Can't wait for it to be done, it smells wonderful. Thank you so much for the great idea

He get them and sit and peel, he'd help quilt by cutting up material,or iron every piece of clothes he could find, for everyone!! His and my sister's clothes, his married kids clothes!! After he retired my sister said he was about to wear her out hunting something to do!! Then he started getting old leather purses and making coin purses, billfolds, etc.
