The SNES is a powerful console when used properly. Pre-rendering the graphics offsets the workload onto the development machines. It has the colour palette for it. Check out the Toy Story run if you really want to be amazed by the SNES. It beats a lot of Playstation games, graphically. Also look into some of what Rareware was developing for the SNES towards the end of it's lifecycle - it exceeds even Toy Story's visuals. It's really not so much the consoles limitations that hold back the quallity of output, it's the skills and dedication of the developers. Just like speedruns, the longer the 'community' (if you can call it that) has to familiarise itself with the constraints of the system, the more optimised it becomes (compare FFIV to FFVI ie). Back in the 8-bit/16-bit era devs more or less had to develop their own engines from Assembly code. The more time (and budget) you have to develop and optimise that engine to the console, the better results. Demoscene coders routinely smash what you would expect old consoles could achieve - Doom on a ZX spectrum, that sort of thing, but they've had like 40 years to fine tune their code and build on past successes and discoveries of other coders on the same system.
