Many had doubts about how the caramel was made, the cooking times and the oven temperature. Well, finally in this video, I will tell all the details of how to make Crema Volteada, which is how we know, in Peru, the well-known Crème Caramel (Flan). In many countries and throughout history, it was adapting to local products and, consequently, obtaining different names.
So, I do it, and these are the ingredients that I use:
INGREDIENTS:
Caramel:
- 200 grams of sugar (about a cup)
- 70 grams of water (1/3 cup approximately)
Cream:
- 8 eggs.
- 800 milliliters of Whole Milk (Fresh, UHT)
- 200 grams of sugar (about a cup)
- 1 teaspoon of vanilla extract.
* It is baked in a bain-marie at a temperature between 90 and 120 C ° (it depends on how powerful the oven is. In my case, in an electric oven, I left it at 1'00 C °) for at least one hour and a half (it works for me with approximately two hours, but it can be up to 3 or 4 hours)
