While I don't like using the word 'crack' to describe food, we are putting the 'crack' into the Cracker Barrel Meatloaf dupe recipe!
Not really a classic family recipe of ours, but since it's loved by our family, it is included in our classic family listing!
Starring my fiance J.R. as a guest chef, who made this one night and it's become a classic family favorite. The ultimate in comfort food, with simple easy ingredients and tips in the video how to achieve the perfect meatloaf texture!
It might be 85 degrees today, but it's never too hot for good old fashioned comfort food at its finest!!
2 pounds ground beef (for this, 70/30 or 80/20 is best)
1 small finely diced sweet onion
1/2 cup finely diced bell pepper
(optional to add 1/4 cup shredded carrots and finely diced celery)
1 1/2 sleeves of crushed Ritz crackers
1/2 cup milk
Salt and Pepper to taste
OPTIONAL Mix 1/4 tsp of Paprika, garlic powder, onion powder, parsley, celery salt and seasoned salt and then put 1/2 T of the mix in
4 oz. shredded sharp cheddar or Colby cheese (we use 1 cup of shredded extra sharp cheddar)
3 eggs
OPTIONAL splash of worcestershire sauce
For the topping:
1/2 to 3/4 cup ketchup
2 tbsp. brown sugar
1 tsp. mustard
Oven to 350. Be sure not to over-mix the meat and to let cool for 15 minutes before slicing.
