Today, I present to you my version of fried chicken KARAAGE (marinated and fried chicken thighs), a great classic that all Japanese people make at home, I have a technique to make it even juicier and even more crispy !!
I prepare two variations of my recipe, “Soy sauce” flavor and “Salt pepper” flavor, At home, we love it!!!
I often make it for bento, you can eat it cold too, it works very well!

Ingredients (for 2 to 3 people per flavor)
Soy sauce Flavor
-Chicken thigh - 4
(chicken seasonings)
-Sugar - 1 tsp
-White wine - 2 tsp
-Salt - ⅓ tsp
-Grated garlic - ½ tsp
-Grated ginger - ½ tsp
-Soy sauce - 1 Tbsp
-Cake flour - 1 Tbsp
-Potato starch - 2 Tbsp
-Frying cooking oil
-Lemon - ⅛
Salt pepper flavor
-Chicken thigh - 4
(chicken seasonings)
-Sugar - 1 tsp
-White wine - 2 tsp
-Salt - 1 tsp
-Grated garlic - ½ tsp
-Grated ginger - ½ tsp
-Toasted sesame oil - 1 Tbsp
-Black pepper - 1 tsp
-Cake flour - 1 Tbsp
-Potato starch - 2 Tbsp
-Frying cooking oil
-Lemon - 1/8
*Be careful, untoasted sesame oil tastes completely different. Choose "toasted sesame oil".
