I made these today. I still kind of suck at rolling them but the bedroom noises I made eating the "failures" made my mom get quiet on the phone lol. They were good and I did eventually get two that would hold the ice cream and they didn't get soggy. My 6 year old came back down stairs a happy kid with ice cream all over his face asking for a second one 😂

Is there is reason why you didn’t want to use a blender to mix ingredients? I’d think blender would minimize clumps.
